I baked this cake this weekend. I could not be happier with the results! I can't wait to bake one for the office. This could very well become my "specialty" cake, as it has now become my favorite dessert recipe. I substituted cake flour. To help reduce doming, I used a set of those damp strips that go around the pans. That seemed to have added a few minutes to the baking time, which started to concern me; however, it all ended well. :) Thank you, Stephanie! And welcome to Coastal Georgia!

I came across this recipe as a kitchen hand in a Aged Care Facility. I made it for the residents,which they loved reminding them of days gone by. Several residents came down to thank me which I admit was a gorgeous great tasting cake.

I always find when I want to bake something You make it so much more simple than others Hummingbird Cake originally from Jamaica and it had coconut instead of pecans Pecans were add to the cake when Americans came back from Jamaica on the 40's and 50's very popular in the USA during the 60's & 70's Coconut is really fabulous with this cake also use coconut oil Enjoy your baking 👏🏾👏🏾👏🏾

From what I’ve read the cake is Jamaican in origin. The hummingbird is their national bird.

I made this cake and was told it was one of my best creations. Stunning recipe. However I will say next time I’m going to reduce the pineapple water a little because I needed to keep it in the oven way longer than stated- I think it made my batter too wet. Otherwise it was BRILL. Definitely recommend.

This is a very good recipe. I always order Hummingbird cake when I visit Coffee Bean and Tea Leaf Cafe but this cake is much more tasty. I follow exactly all the instructions and ingredients except I use walnuts instead of pecans which hardly get in Malaysia.

OMG I love and I mean I love your videos! You really give us fool proof and delicious recipes! I'm a baker too and I have to say I absolutely love that you always give out the recipes in volume and in weight, I'm a scale freak so for me that is the way to go to always get perfect results! I have the same Kenwood model and as it is fairly new was wondering if you did the thing about adjusting the hight of the beater, I kind of remember I read something like that on the instructions booklet but some how haven't got the time to go around it again! I have made this cake for Thanksgiving and Christmas for many,many years and can't believe someone has made a video of the recipe and putting it together . Firstly,i have always used self-rising flour(this omits using all-purpose flour and then adding baking soda and salt as the self rising flour already has salt and baking powder in it so why the extra steps she is using is beyond me) but she makes it her way and i make it the way the pastry instructor told us about the different types of flour(bread flour self rising flour,cake flour,all purpose,rice flour and etc,etc).On the bananas,you can also use banana baby food but it just tastes better when using bananas that you finely chop or even smash(i use my food processor for this and get them to almost a liquid stage). Also,she mentions you can use olive oil or canola oil in this cake and that isn't true. I have made this cake with olive oil and canola oil and it ALWAYS comes out VERY oily so use vegetable oil. My recipe that i have been using for like i said many,many years will make a three layer cake(9" round). Her measurements compared to my recipe are all exactly the same. When i was the pastry chef at the convention center here where i live people LOVED this cake and always asked me for the recipe. If you follow this recipe it is fool proof. You can't mess it up unless you don't follow the recipe. It's always moist and so,so ,so rich and great with a cup of coffee or a big glass of milk. One thing i noticed with her demonstration is if she used all the measurements in the recipe i have, and she did,she should have enough batter for 3 9" layer cakes so i don't know if they edited that or not.Anyway,happy baking.

Stephanie: Thanks for your professional baking videos. You are surely helping thousands of people to learn to bake properly. I have one question. Of late, I have been reducing the sugar in my recipes by about 2 tablespoons of sugar because, the people I know are not eating a lot of sweet things any longer and that is fine. I have one problem and would like to know if you have a solution for getting the icing not to taste so sweet. I don't want to make the icing runny, but I find I that I don't like the very sweet icing any longer. I have to ice the cakes when I take them to functions.

I'm gonna butt in... suggest you try Swiss meringue buttercream or Italian meringue buttercream- totally delicious and not so sweet...but VERY buttery!!! Don't be put off by the method of making it, couple times and you'll find you could make it in your sleep!! There are a multitude of tutorials on YT. Good luck!

That's one hell of a cake.. Worth making it for special occasions or for celebrations.. Love it, love the idea of using both mashed bananas and crushed pineapple in one cake.. Just one thought Stephanie, is it ok if I moderate the sugar amount for this recipe from 2 cups to 1 cup ? Also is it ok to use light brown sugar for this recipe?

I would say: Just try it out! The use of brown sugar should be absolutely fine, and if you don´t like your cake too sweet, then just reduce the amount of sugar :)

Hummingbird cake is sometimes touted as a "Southern classic", but it is not. Not sure of its origins, someone below says Jamaica which makes sense, but Southern Living made it famous in the 80s/90s. That pan looks more like 10" than 9", but perhaps three 8" layers would make a less flat final appearance and give more frosting per bite? It is truly incredibly delicious - neither the banana nor the pineapple dominate the taste, but blend into something greater. Not far removed from carrot cake, but far more moist and flavorful. Great video!

This look so tasty and I want it to try this recipe but I wonder if it's possible to bake dough in one mold and cut it later? (my oven is not that big and I have one mold) I wonder how much longer I should bake it then? Or should I rather use a big square one (dough will be thinner spread in it so easier to bake it properly) and cut it in half...
