Used this exact recipe in a 7.25 Qt Dutch Oven and it worked beautifully. No need to divide the dough. Baked it at 450º for 45 minutes and took off the lid for the last 15 minutes. Another great recipe!

I wasn't a fan of bread until the first time I bought some from a bakery fresh out of their oven. But making by hand I thought was too much time and work - I was young. Everything changed when I got a bread machine and then I became so hooked on fresh bread. I never buy from the store. The smell of bread baking makes me lose self control and nearly eat the entire loaf when it's barely cool enough to cut. My favorite bread is pumpernickel. I hope you will demonstrate how you make it some day. So glad I have all the ingredients for this recipe so I can make this weekend! Thanks Stephanie!

Stuck indoors I've made..Soda bread, NY cheese cake, pretzel sticks and yesterday the Black bottom cupcakes. I can't get yeast so the cheese souffle sounds wonderful:-). I might get yeast on Monday and try this bread. Everything freezes well so I can spread out the calories. Thanks Stephanie

Today I made this bread and I adapted most of the ingrediant since most of the shop close (as per covid -19 lock down) I use all purpurse flour , normal salt and sugar (instead of malt) Its taste so nice but I think I did not knead enough so inside the bread it quite thick but this bread is easy to do! Thx for the recipe

Great clear, easy to understand, excellent video! Totally new to baking, here. A little confused by the towel step. I understand the dough needs to rest on a floured surface to prevent sticking, but couldn't it rest on the pizza peel which you move it to in a subsequent step? Also, I plan to make only one loaf. Should I simply cut the ingredients in half?

Hi Stephanie. I love your website and recommend it to everyone! It is helping me to stay busy during quarantine. I made the Homemade Hostess Cupcakes, the Brown Sugar Pound Cake and today the Artisan Bread. Of course I don't have dry malt powder so I left it out. Just watched your video for soft pretzel sticks - in that one you recommend adding sugar if not using the dry malt powder. Should I have done that when making the Artisan bread? I'll be making more bread so wondering for next batch.

If you liked how the bread tasted, then I wouldn't add any sugar. But you could add a little sugar if you want a little sweetness.

Those loaves are fabulous! Sadly the ice cubes technique never works for me. I always end up with a soft crust, but good tasting bread. Greetings from NY

try removing the ice cube tray after 10 minutes or so of baking. Once your bread is done , turn the oven off and leave it slightly open for couple of minutes .

I love this recipe! I ordered the dry malt powder and it finally came so I will make the bread again today. I now have 1.5 lb container of the dry malt powder which is going to take a long time to use up - should I store it in the freezer?

This type of bread has a rather short shelf life. It can be stored for a day or two, but it is best the first day. It makes great toast.

Try placing the cut side down on the cutting board. I do that with all homemade bread, no matter what type. I hope that helps.

Hi Stephanie. I have tried to bake this bread 3 or 4 times with the same result. The bread flattens out in the oven and results in a very dense, inedible texture. I follow your recipe to the letter. Do you have any idea why this is happening? Thanks!

Semolina or flour is used in Pizza shops because cornmeal burns. As the breads went into the oven there was smoke form the burning cornmeal

The bread doesn't really have a shine, it must just be the light reflecting off the bread.

If your instant yeast has been stored in the freezer, and you aren’t sure if it is too old to use, can you proof it like you would active dry yeast?
