1eafy Gre3nz By certain definitions water is wet and others it cannot be. The technical definition of “wet” in science is any substance that has liquid adhered to it. Since water is cohesive it adheres to itself and since water very rarely exists as a single molecule by this definition water is usually wet. Water is also not the only thing under this definition that makes things wet as it can be any liquid adhering so water could them be made wet in the presence of another hydrophilic liquid. Wet could also be defined as specifically a solid surface with liquid adhered which would mean water couldn’t be wet unless it is ice. But then this definition doesn’t really work for the term “wet mix” where the mixture is usually just a bunch of liquids (some that don’t even adhere to each other like if you added oil) and wet is just describing the presence of the liquids vs the solids of a “dry mix” in which case even if liquid water is present by itself it would again be “wet” since no solid is present. Words can be pretty contextual and language is constantly changing so saying water could NEVER be wet based on only one definition misses a lot of uses of the word wet.

as someone who worked at panda express the ingredients are actually -orange extract -basic sauce (which is basically a sweet soy sauce/watered down oyster sauce) -two cups of sugar per "batch" (forgot the measurement for a batch, probably more like 3/4 cup or 1/2 cup for a single fry basket of chicken) -garlic + ginger - chili flakes - corn starch (like maybe 3 tbsp per fry basket) -rice vinegar that's literally it.

It makes me so happy to think that every time Julen walks off camera, he walks straight off to give his dishes to Jenna, even though we don't get to see them together or hear how it's not allowed. It cheers me up to think that that moment is strictly reserved for them two to enjoy together now, off-camera. If Jenna is happy then I'm happy, because let's be honest, Julien would never have gotten this incredible at cooking if Jenna wasn't there to inspire him. I think this will be the first recipe of his that I'll recreate, because now I feel inspired just like him.

Would you consider doing a video on the basics of cooking tofu? I know you've mentioned things about it here and there in videos, but for someone who might be interested in cooking tofu but has no idea where to start so that it actually comes out good, a video on that would be awesome! Like what are some good brands of tofu to buy? What are different types of tofu and when to use which kind? Do you need special tools (like when you say you pressed the water out of it)? I'm sure that when you first started cooking with tofu you didn't have all the knowledge about cooking it that you do now, so basically just a "getting started with cooking tofu" kinda video would be awesome. Like things you maybe wish you knew right away when you started cooking with tofu. :)

Hi there, I’m no tofu expert, but I do know a few things. Brace yourself, it’s a long one. Tofu tastes like nothing at all, and I truly mean nothing at all, but it absorbs flavor like a sponge, so you can make tofu taste like anything you want by using the right spices and ingredients. There are different types of tofu. The silky type is very soft and very creamy, it does not hold itself together very well, so it is mostly used in sauces, or in desserts. It’s kind of like cream cheese. Or maybe more like ricotta. The firm type is what you wanna use to replace meat. The texture is... hard to describe. It’s firm, but like... I don’t know how to describe it but it’s pleasant. It is NOT jelly like, despite it’s appearance. When you freeze tofu, and then thaw it, the texture changes radically. It gets a bit flakier, and the firmness of it starts to resemble chicken. That’s why many people freeze their tofu before cooking it, so it’s even more meat like. There are flavored tofus on the market, the most popular being smoked tofu, that tastes really smoky and delicious, it actually kinda tastes like bacon. By frying it lightly, you can get a nice bacon replacer for sandwiches and stuff. But I know of firm tofus that are tomato flavored, pizza flavored, garlic flavored, etc. All of them are really good. I suggest that you look up the brand Taifun, as it’s the best I’ve ever tasted and many can agree with me on that. When you use regular firm tofu, since it needs to be soaked in water to be preserved without getting moldy, you do need to use a tofu press to get rid of as much liquid as possible before flavoring it and cooking it. To preserve tofu after opening the package, you have to put it in enough water to cover it, in an airtight container, and change the water everyday. This way you can keep tofu for 5 to 7 days in the fridge. Tofu being extremely prone to bacteria infestation, if it’s not in water, it will get dry and moldy, loose it’s flavor, and absorb the flavors of the fridge. Then, when it comes to flavoring tofu, I find that the best method is letting it marinate in something for about 30 minutes. Your imagination’s the limit. You can use soy sauce, herbs, garlic, onions, etc, and let it absorb all these flavors before cooking it, and it’s going to be amazing. Good luck!

And I just love the idea of at least working more vegan meals into my diet, even if I never go fully vegan. I've had some very delicious vegan meals from restaurants before but I've just never cooked tofu myself, but always been interested. I knew about it tasting like nothing and soaking up whatever flavors you marinade it in. I'd also heard that if you don't prepare/cook it right that it either tasted like nothing or had a weird texture. The explanation on freezing it makes total sense now why Julien did that since he was making it as a chicken substitute. I'm gonna have to get some tofu and try it out :) Thanks again for all the info!

Mishler Furramily oh there’s no need to be vegan to appreciate tofu, as demonstrated by most Asian cultures! ☺️ I’m not even vegan myself, just vegetarian. It definitely helps, not gonna lie, since it’s not as hard finding meal ideas. So being a meat eater allows you to go even further. I’ve never had an experience when cooking tofu would go wrong, I think that as long as the tofu has been well pressed, there shouldn’t be an issue about the texture. Taste is a different matter, it might indeed turn out bland if there wasn’t enough flavor in the marinade, but that’s also the case with food in general. People often suggest that newcomers try smoked tofu or garlic tofu before going for regular tofu, as it eases them into the process of cooking it, this way, even if the flavoring was slightly off, the result usually tastes great anyway, so maybe you can try this way first to get familiar with it! Anyway, I’m glad I could help! I wish you luck! 😄

I am kinda doing a trial and error experiment with tofu right now lol. Everyone who knows anything about tofu is gonna cringe so sorry! I got some extra firm tofu and using a combo of plates, towels, and patience, I squeezed as much water I could out of the tofu. I then cubed it and let it dry out a little bit in the fridge. I wanted to make a riff on Blue Apron's Persian style chicken and rice so I carmelized the onions and cooked the zucchini earlier while I waited for the tofu to dry a little bit. I then used soy sauce, water, peanut butter, chili oil, red chili flakes, cardamom, cumin, and turmeric to make a "glaze" for the tofu instead of the typical dry rub that I use for the Persian style chicken (the three spices i listed in 1/2 teaspoon quantities). I then remembered that the recipe calls for garlic so I added garlic powder. I then tried to "toss" the glaze and the tofu in a bowl and that was not my best idea. It broke up the cubes but not too bad. I then tried to brown the tofu a bit, but I was too impatient and hungry so eventually I gave up and just added everything into the pot and warmed up the prepped vegs that way and ate it as is with a dollop of greek yogurt and some green onion. Adding the peanut butter and the soy added to the overall flavor so I am glad I added it, but I have some more tweaking to do before it's anywhere on par with the orginal recipe. The spicy elements were nice but not in line with the original recipe. I took a lot of things out of the recipe ie the actual garlic, fresh parsley, using oil rsther than butter, chicken, lemon in the yogurt, diced peanuts on top and rice entirely. I am still looking for a good greek yogurt substitute so that's the only none vegan part of the recipe that I can't find a vegan replacement for.

I'm a cook at Panda Express, part of the job is memorizing the recipe. We obviously go really big because we are a restaurant, but our recipe is: 5 quarts of vinegar 5 quarts of sugar 1.5 quarts of Basic Sauce'* 1.5 quarts of water *basic sauce is what we use for soy sauce, it's a mixture of soy sauce, corn syrup, and water. I don't know the exact measurements in it. We take this mix and portion it out into 4 or 8 quart pans for use in the kitchen. A 4 quart pan gets 7 grams of corn starch and 1 tablespoon of orange extract. The chicken is just 4lbs Tyson dark meat chunks. Heat up the wok and add 1.5 tbsp of ginger and garlic mix, 1tbsp of chili flakes for 5 seconds. Add in 1.5 tbsp of cooking wine and 2.5 cups of sauce for 4lbs of chicken. Heat the sauce until it thickens, add in the chicken and toss it until it's covered, add in 1.5 tbsp of sesame oil and toss some more

If you're trying to be vegan/vegetarian, I've heard that their sauce has oyster sauce in it. I could be wrong and you've probably checked the ingredients if you're trying to avoid those kinds of things

i second this idea although i never really liked panda express when i ate meat (like 17 years ago) but really preferred authentic chinese food from chinatown. american chinese food is actually the most american food in all of america. apple pies, mac n cheese, hamburgers, pizza, etc. all came from europe. but american chinese food was invented in america for americans, by chinese american immigrants who realized that americans didn't like their traditional food, but if they added a whole cup of sugar to it, and a few more american ingredients, the americans loved it. but it's definitely funny to me that panda express is more american than any foods a person usually associates w/ the USA :p
