There are certain dishes where you actually want to use dry noodles since they can be al dente and hold up to stir fry better without breaking. That being said, I'd be hard pressed to make a batch of fresh pasta in less than an hour - let alone the rest of that dish. Very impressive.

Yup. Durian is king of all fruits in Asia.. especially my country Malaysia. We treat Durian like gold here. About 90% of the citizens here love Durian so much. And Durian is my most favourite fruit too.. Now is the durian season again in Malaysia.. and I have Durian almost every week. You can make Durian dish like Durian cake, Durian pizza (only in Malaysia), Durian mochi, Durian ice cream, Durian candy.. Some people use Durian to cook curry too.

Make a sorbet from the durian. When you freeze durian it tastes like pineapple. But when it room temp it taste like rotten onions. Freezing durian tones down the sulfur content and brings out it sugars.

But if they make sorbet, ice-cream or cake using durian, they won't be able to be choose to stand in front there, coz these are already things that already on the market. The judges are looking for creativity, so if they make something which already popular on the Asian market, they might lose their chance to be chosen.

I am so unreasonably upset with the squab and chanterelle broth. Sure, the chefs said it was delicious but using the whole bird and all those delicate mushrooms on a broth is so damned wasteful. You make a broth from scraps, not from whole ingredient like squab and chanterelles. And then she didn't even use the pigeon meat! That little pigeon costs about $30, the amount of chanterelles was probably another $15. She wasted $45 on making a broth.

that's what luxurious competition cooking is about, it's not "save the money" challenge. Also, I make broth from the whole bird and good vegetables and just eat the cooked meat later, what's the problem. Broth doesn't have to be cheap, it can, but you still can make it more expensive and use the cooked food otherwise.

Yes Sir. Durian is king of fruit! I highly recommend people who travel in Southeast Asia, especially travel to Malaysia, Thailand or Indonesia to try Durian. It's more tasty & delicious compare to import & frozen Durian that western hate

If you know how to work with things like authentic parmesan or blue cheese...you should be able to work with durian. These things have a pleasant taste or texture but they're pungent. Idk why durian, a fruit, has this reputation as being so unforgivably gross but particularly pungent cheeses are considered the epitome of gastronomy.
