Junay or junai, is a Filipino-Tausug packed rice dish wrapped in banana leaves with burnt coconut meat and various spices. It originates from the Tausug people of the Sulu Archipelago. It is made by boiling rice in water or coconut milk until half-cooked. It is then wrapped in banana leaves with pamapa (powdered mixed spices), oil, salt, and siyunog lahing (powdered burnt coconut meat). It is further steamed in water until fully cooked.
Ingredients:
• 2 Tablespoon Cooking Oil
• 1 Medium Onion
• 3 Gloves Garlic
• Chillies
• 4 Tablespoons Pamapa Itum

• ½ Teasespoon Salt
• ½ Tablespoon Blackpepper
• 5 Cups Water
• 3 Cups White Rice
• Dried Shrimps
• Banana Leaves Or Tin Foil
