Italian Peasant Bread - The sweet aroma of whole wheat and corn perfumes the air as the knife breaks through the crisp and crackling crust. The first slice reveals a crumb that is light and airy with a open textured with a few large fermentation bubbles throughout the loaf. You can taste the subtile sweetness in the bread which is developed in the loaf from the Biga. This bread is a throw back to days when Italian bakers used a less refined flour and time to develop the subtile and complex flavors to make their breads. Baking the loaf on a hot baking stone produces a bread that has the characteristics of a bread baked in a wood-fired oven. Hand-shaped and hearth baked the Italian Peasant Bread is sure to become one of your favorite breads to make at home for your friends and family.

I have made this recipe twice this week. The first time the bread turned exactly like the picture and it tasted amazing. The second time I let it rise too long in the final proofing so the loaf looked more square but it still tasted amazing!! This will now be my go to recipe for bread! We love it in our house! Very professional and edited instructions. I wish all youtube videos were like this one. AND, the technique for making the bread is very clear and most importantly, helpful! Not flouring the counter while kneading was a new idea.

Great video and wonderful recipe. Made this yesterday with Semolina flour instead of corn meal. Turned out delicious 😋. It’s a hit at home. I also cooked in a Dutch oven I have a large oval one that worked perfectly. But I kept it covered for 15 minutes Thanks for sharing

Though I don't have a bakers stone or metal bowl to cover the bread in the oven (I used a baking tray and covered with tin foil), this is still the best bread I've made, ever! The taste and texture is fantastic. Thank you Sir.

This is a universal favorite among family and friends...leading to requests for more! I'm so lazy that I start the biga in a bowl large enough for the final addition of ingredients and feel that I have saved washing one whole bowl! Thanks for a recipe that has made several people very happy!

So many great comments and it's so nice that you take the time to answer each and every one!!! I've actually watched the video and re-watched it probably over a dozen times I'm making the bread for the second time maybe the third! I'm using a baking stone Bowl and preheating it to the 500 Degrees; I use the suggested 10 minutes and then take the bowl off. I'm also using a baking Trey to put the bread on the stone as I don't have the correct item! This bread comes out so fantastic my wife makes me bake it Over & Over!!! I can't thank you enough for this wonderful recipe!

I made this bread today and it turned out wonderful. Although my electric oven is only 230 C maximum. Would definitely make it again. Thank you for such a wonderful recipe.

That’s cool how you used the bowl over the bread while it was baking, rather than using something like a Dutch oven.

Hello Block_The_Delinquent, Since most of my recipes produce much larger loaves and are shaped differently than a Dutch oven. I use a very large stainless steel bowl to trap the initial steaming in the first 10 minutes of baking the loaf on the stone hearth. Thank you for taking time to comment.

As a less expensive way, I've used aluminum roasting pans in the same fashion.

Thanks for posting the video. I made a bread that i liked, wasn't full of holes, nice texture nor wet. Lacked a stone and metal bowl to cover in the oven. Just used a heavy tray to sit on. Came out great. Toasted brilliantly for breakfast. Thank you.

Really excellent video. This preferment is not a biga (which is a thick, low hydration levain) but rather, this is a poolish (high hydration, more like a batter). A poolish preferment has many advantages, including better, faster enzymatic activity, and it’s also a lot easier to mix into the dough.

Cornmeal in the dough batter.... interesting. I make Italian bread all the time and my guess is the reason for covering the bread with the bowl in the oven is to create some steam. Some just spray water on the bread twice during the first 10 mins but I like the bowl idea. You are a pleasure to watch. Thank you Alejandro :o)

It looks so delicious. I have never tried making bread but I make all of my homemade pie crusts and pies from scratch. You make it look so easy. I've been baking pies for 21 years now. It takes a lot of practice to get it right.

I started baking and cooking professional over 29 years ago and it was the practicing of the recipes over and over that gave me the skills I have today. Thank you, I have used this recipe without change a number of times. Also in a bread machine loaf, for buns etc. One modification has been the addition of about 5% shortening to just soften the bread a bit and a reduction in Poolish yeast to extent preferment time (for my own convenience).

Hello The Truth about de Blasio, The long fermentation of the poolish is due to the small amount of instant yeast that is in the recipe. This is how we as bakers develop flavor with very simple ingredients. The total hands-on time for the recipe is about 18 minutes. Here is the breakdown of the process: 1) Mix Poolish - Ferment for 8 to 10 hours 2) Mix Final Dough - Bulk Ferment for 2:15 hours (with 2 folds and preshape and 15-minute bench rest) 3 Final Shape - Proof for 1 hour 4) Bake - 30 to 35 minutes 5) Cool - 1 hour at least before cutting I appreciate you for taking the time to leave your comment. You have inspired me, and I'm going to try this recipe as you state it! Your biga and end product look amazing. Your dough looks so soft, elastic and wonderful. As a beginner, I worry that you have two one hour rises plus a final proof and that the yeast won't be strong enough, but I'm going to trust your recipe and hope for the best. Also with regard to the final proof... why do you cover the bread? Doesn't the bread need room to rise? Does covering it let all the gas accumulate in the middle? i noticed you have nice big air pockets in the middle of your loaf. Thanks, I can tell you have a zest for what you do. As an instructor and teacher, it is my goal to have students learn the life skills of cooking and baking and to understand the process, technique, and skills that allow us to be creative and have fun while we are up to our elbows in dough. Here are my answers to your questions: • The dough is proofed in the couche to retain the batard (football) shape intact and the surface uniformly dry as it proofs and rises. This helps to develop a thin “skin” that bakes to a crispy, chewy crust. • To create a more open crumb structure in the final loaf, I would suggest using a light hand when degassing the dough into the preshape and final shape. This will cause the fermentation bubbles to be retained throughout the dough. I encourage you to not be afraid of making mistakes when learning a new recipe. Understanding you can learn a lot from a mistake. Becoming a good cook or baker is more than a recipe done once. It’s the learning of a process, repetition of a process, learning the skills and practicing those skill, making mistakes and learning from your mistakes and not repeating those mistakes that will take you to the next level of cooking and baking. Hello! I have made this two times already. Each time it is getting better. I have some biga I set aside for tonight, so I will make another loaf in this style in the morning. Thanks for much for your advice and encouragement. Last time the bread had a very structure, easy to cut, with a nice crumb with bubbles, but not very big ones. I'm not sure I remembered your advice about degassing lightly before the last shaping. I also neglected to cover the bread as you did with a bowl, but I will try to do something like that this time. We as the baker helps to develop the breads final texture, crumb structure, and crust through our limited efforts. You can apply the No-Knead techniques to this recipe if you so desire. I can smell the deliciousness of the whole cornmeal and I fresh ground the whole wheat right before adding it to the biga. We are already going to sleep now so in the morning we'll eat it. I'll be dreaming of this, the whole house smells amazing. * I did make one error and added double the cornmeal but it still turned out.

In Asia my cousins who have bakeries do not use yeast in the dough and they have a long, slow rising. They are shaped the day before and baked at dawn the next day. The result is a wonderfully nutty fragrant and chewy bread with great depth of flavour and crisp but not dry crust. Everything a great bread should be. It stays fresh for a week but never lasts a day. I miss the breads of Asia.

Thank you! I wish you a lot of fun and joy on your music experiments! I need to make videos again, and not only about music but too about cooking and woodworking too! About the recipe, they turned out REALLY great. I've been using this technique to replace the main liquids (water, milk, etc) for whey in my bread recipes for some time now, and they develop a very rich flavour, and the overall aspects of the bread (texture, elasticity...) improve really well too. The only two problems were with the Big Mac "Club" buns, because the molding moved of its place and they grew looking like Pisa Towers, hahahahahaha... The other problem was with the parchment collars, they ended bonding into the buns, removing part of the buns when I've tried to remove it. Other thoughts: I always experiment / change ingredients on my recipes to try new textures / flavors, but to make really smooth burguer buns, I've always tried to change / increase the amount of sugar, and using butter instead of oil, but I never changed the amount of eggs. I'm really happy on how they ended: a pretty good golden brown color (despite of the small amount of sugar), the surface of the bread is incredibly smooth, and I guess that this is related to the use of flour during the kneading / folding process, which I've never made without adding flour to the process. Of course, the amount of flour needs to be precise, and here I ended needing to add more not only because of the ingredient replacement (whey instead of water and milk), but due to environmental differences (I'm from Brazil) and even eggs have different aspects (here, for example, I'm not able to find such a large egg, with this huge egg yolk). Next time, I'll keep the whey and add fat from fried bacon and see how it turns out! By the way, do you do this kind of experiment, change ingredients every now and then? Sometimes I change the liquid to a tea, and / or add a vegetable puree, like potatoes, pumpkin, "mandioquinha" (which is a brazilian vegetable), and so on.

Mateuleon, It's great your experimenting when you're baking. I find if I'm going to make any changes I only make one change to the recipe and keep a record of it. That way I know how the change impacted the final baked good. As for Leaning Tower of Pisa Big Mac Buns and sticking parchment. Some of my students had the buns shift and lean during class and I wasn't sure why. The parchment collars can be buttered or sprayed with non-stick oil before the final shaped dough goes into it so the baked bun doesn't stick when removing. I'm so glad you had a good experience with the recipe. Again thank you for taking time to share your baking experience and how you modified the recipe. I really appreciate it. P.S. My KZbin analytics tell me Brazil is my 2nd largest viewing audience after the United States. I find this to be amazing! I'm curious how did you come across my video?
