@@billc6762 30 years ago, eels were still a very niche food. The demand for it has shot up by a lot now, especially internationally. Also, to my knowledge, they still haven't truly figured out how eels reproduce, so they are still relying on mother nature for the reproduction, and reproduction has gone down drastically over the years. Japan probably has barely enough for their own population, so that's probably why they stopped exporting, which is why you can't get it anymore. I know the Japanese are trying to figure out how to farm reproduce, so they don't rely on mother nature for the quantity, but it's still a long way before this can happen. The life cycles of eels are quite fascinating. I think they have 3-4 stages of development, and they look very different at these different stages. At one point, we humans thought they were different species. It took some scientists studying the early stages for a long time, thinking that he was studying something else, and then finally seeing the morphing to figure out that these 3-4 different species were, in fact, one species. Yeah, eels are mysterious.

不懂裝懂.鰻魚還有假貨的喔.拿什麼魚去假?小規格的鰻細刺小.可以無視.一般都是日本收購去了或是高級鰻魚蓋飯店採購了.再來才是養過頭過大了.細刺變硬讓你吃得出來影響口感了.一般加工製成熟食內銷.或是交給餐廳燉中藥的鰻魚湯.細刺變粗有兩種處理方法.壓力鍋短暫壓一下讓細刺軟化.另一種就是殺魚的時候多一道手續像在肉上刻花肉沒切斷.不過將肋骨刺全切成小段方便食用.懂了嗎?假貨哩
