I just cut them in half horizontally, scoop out the seeds and membranes for the squirrels and microwave the squashes until soft or bake in the oven or air fryer, no need to add oil, honey, salt, or anything else, just add some side veggies, salad, beans, etc. By the way natural carbs, without salt/sugar/fat added, are the beneficial carbs full of goodness and fibre. So let's not promote a low carb diet, these carbs are what our body needs. It's the processed carbs that we want to stay away from as they're addicting and fattening, so yes to fruit, veggies, squashes, potatoes, wholegrains, etc. as these are the good carbs, no or very limited amounts of pastries, etc.

These remind me of Dominican pumpkins(Auyama). They have the same dark green outside and insides but the sizes vary. One of my favorite things to make with this is a mash, where you steam/boil them, then add a bit of butter and milk.(similar to mash potatoes) You could eat this alone but one my favorite things to do is add some lightly fried onions (that have been cooked with a like TB of vinegar& a pinch of salt). It totally balances the sweetness of the mash with the saltiness the onions. It's a great side dish.

A very beneficial food to eat, like Okra, Avocados, Cabbage, Kidney Beans, and probably all the rest of the green and red vegetables and legumes. My mother is 91 years old and refuses to use a cane or stroller. She is accustomed to eating kabocha regularly in her diet. Somehow a few weeks went by recently where kabocha did not make her plate. During these weeks, she suffered from severe neck pain, and later developing strong back pain. Eating kabocha again, she has begun to lessen her pain and restore her agility. After seeing her suffering without kabocha and her recovery beginning with kabocha, my conclusion is: For the body to work properly as you age, Kabocha is an essential food. Without it, the body begins to break down. With it, your quality of life improves greatly. Along with kabocha, I am told that Okra is good for battling frailty because it improves blood circulation and reinforces bone density. She used to infrequently bring okra to the table as well. I have been reading that Okra also is good for cleaning out the entire digestive tract, because okra escorts poisons collecting in the stomach out of the body, which reduces the chance of developing rectal cancer and other abdominal complications. The absence of poisons allows for the necessary microbes to flourish, so proper digestion can now take place. My mother thinks these facts are common sense notions about food, agriculture, and health. However, these ideas were not handed down to me. I guess you have to live the Japanese existence to such ideas. I hope the story of my recent experience with these foods will provide you with knowledge, and that you find wisdom from discovering it, so that it becomes a blessing in your life. By the way, there is a God, and there are God's people. The Bible states God identifies God's people by seeing who follows God's original 10 Commandments. Christians on the other hand, have faith that Jesus Christ will blot out our sinful nature, so God can accept us into God's Kingdom. As the song goes, "Yes there are two paths you can go by, but in the long run..." the New Testament Bible requires both. Revelation 14:12 states the people of God keep His commands and remain faithful to Jesus, thus following both paths. Do you not want to be part of God's people? Please choose to keep all 10 Commandments as originally decreed by God, pursue understanding of God's Plan of Salvation for humanity through Jesus Christ, and allow the Holy Spirit to engage in discussion with you about the merits of practicing acceptance, forgiveness, and compassion, out of which personal transformation occurs.
