I am so hungry after watching this! That is a perfect rice dish. Thanks to you and Shinichi, I get to discover dishes I didn’t experience when I was an exchange student to Japan in 1986. I was too young to really “get it” when I was there,. Reviving my interest in Japanese food and culture now in my 50’s. Love watching you guys!

He puts dashi which is fish flavored seasoning. I think they have veggie dashi which dont have fish or other animal products in them.

@@Js_Son83 - One of the big brands of Japanese konbu dashi is accidentally vegan, and is a staple of my kitchen. It's also pretty easy, though time-consuming, to make. There's also shiitake dashi, which is umami joy, and blends of the two.

What a great tip on how to dissolve miso into soup with a strainer…and I didn’t know you shouldn’t boil the miso soup once the miso is in. Both dishes looked wonderful!

Satoshi San can you cook a dish using different sources of water to see what the different results are? I am told that some Japanese dishes like shabu shabu is hard to replicate overseas because the cook uses water from Mount Fuji for example and it tastes different than using tap or even other mineral water.

This looks delicious! What do maitake mushrooms taste like? I haven't seen them around here. Also, how fast is your cooker, how long does it take for the water to boil? On my cooker, 5 minutes at high heat would mean the water is only lukewarm, so I assume yours is faster.

Honestly I'd say it's all down to preference, but maybe the white miso to not overpower the taste of the mushrooms. The red miso has a more fermented taste than the white, but they are both very delicious!

Absolutely, yes. Add the soy sauce/mirin first then add water second so you have the correct measurement, but it should be even easier than cooking in a regular pot. Of course be sure to follow any guidelines your rice cooker has. Mine says to only use 2 cups of rice max for mixed rice.
