I was in Europe during covid and because I missed Japan I'd add karaage as one of the dishes I'd make for Xmas. Unfortunately, my karaage never comes out as good as it does in Japan though so I guess I'll have to keep on practicing. The supermarket was out of chicken one year so I used turkey-meat instead and it was surprisingly good. So that's another option if anyone wants to give it a go.

why both soy sauce and salt? since both are sodium
