i baked this over the weekend. use full recipe and divided into 2 x 6" round pans. baked for 80 mins. Cake was a bit dry, maybe i baked too long. but the taste was good, not too sweet. will definitely give it another try. Thanks for sharing your recipe, Chef

you can keep it even after Christmas , keep brushing with rum or brandy every week and wrap in plastic wrap and foil .

after i glaze with rum on top of the cake,wrap with plastic and aluminium wrap , i keep it at room tempreture or put in the fridge until christmas? as is it advisable to glaze 2 -3 times a week

I used this receipe after seeking out numerous before and measurements and video easy and simple to replicate and cake turned out perfectly - tweaked to have a black caribbean cake with rum, port and currants, raisins and prunes... perfecto.

I didn't keep it in the freezer,used to keep in room temperature and its ok and taste well with four times of Martell on top and side of the cakes.

She added baking powder at 4:32. The spices that she added at 4:39. Hope that helps.

No, it's not 5 spice. Mixed spice, also called pudding spice, is a British blend of sweet spices, similar to the pumpkin pie spice used in the United States

Less sugar because the mixed fruits are sweet A well baked alcohol fruit cake , well wrapped put into freezer can last for years.
