Hi I notice that you did not cream the butter and sugar to pale & fluffy, also the mixing in for eggs also within short span of time. Is that how you achieve kind of open crumb in your final product? My cake texture was very fine and dense. I uses stand mixer. May I know why? Tk u

yes, just mix till incorporated will do, no need to mix till pale, also prevent from overmixing especially after adding flour mixture. or else cake will be tough and hard.

I have tried so many different recipes and it turned out too dry and i would say Iwen's recepi is the best. Moist and full of flavor. Meanwhile, may i ask how long i should bake with 2" x 7" high mold?

Oh wow so glad you like this recipe, how you can try.. baking time depends on the depth of cake batter in your mould, the deeper the depth the longer it bakes

I try to soak the dried fruits with whisky the quantities seems to be a lot. Should I cut the fruits for 2 6inch cake or I should go ahead to put everything for 1 cake? Also do I need to drain the liquid before I mix the dried fruits into the cake mixture? Please advise

Yes u can. If u use same recipe for bigger pan u need to reduce the baking time according to your oven. Cake batter depth has decreased make it bake done faster

Hi there such a lovely cake. Just wondering if baking at 160 degrees initially for around half hour and reducing the temperature to 130 degrees for another 2 hours+ could prevent the crack on the cake top ?

I think Iwen mentioned if u use liquor, you may skip using the orange juice, brown sugar that procedure. Straight away use liquor to replace the orange juice. ❤️

Depends on the depth of your cake batter, the deeper the longer, the thinner the quicker.. If your pan area is larger, the cake batter will be thinner thus bake faster abit
