Tomato Pie with Cheese Topping

This tomato pie apparently is very popular in the southern US. It's simply a pastry case filled with layers of sliced juicy ripe tomatoes, basil and optionally crumbled bacon. This is topped with a mixture of cheese and mayonnaise and then baked. Tomato pie is a very simple thing, but amazingly tasty.

R'reet Keef. Blimey! how apt is this recipe just as I've got a glut of tomatoes especially big beef steak ones in my greenhouses. I did your scotch pie recipe yesterday & even got a packet of genuine scotch pie seasoning from north of the border to try. Very good it was too. Missus wont eat lamb so I've got lots in the freezer for ME 😃 Agreed Bramwells stuff from Aldi is good I've got a cupboard full of their stuff.

I’m also from freedom land so I don’t know for sure, but wouldn’t it be the loin? Assuming back bacon is from the back of the pig, the back is the loin.

There are many ways to make this……I find the mayonnaise unnecessary, instead layering the tomatoes and cheese with basil and spring onion and topping with more cheese. Also like to use two cheeses, mozzarella plus whatever other you like best. Some people like a layer of caramelized onion on the bottom (no basil or spring onion) with Gruyère or aged Gouda. Delish😊

I’ve also seen many people use mayo instead of butter on the outside of grilled cheese sandwiches. I vastly prefer butter (for the flavor) but seems something about the emulsification of oil in mayonnaise makes it cook differently than one would otherwise expect from something containing raw eggs.
