Keto Bread using yeast and vital wheat gluten recipe I make like the real bread

This is my personal favorite keto bread recipe.
It tastes much like the regular loaf bread in the market.
No eggy taste and it’s very light and so fluffy.
What you need to make:
25g Oat Fiber (not oat flour)
180g Vital wheat gluten
50g g Almond flour
40g Coconut Flour
1tsp Baking powder
1tsp Xanthan gum
15g Sweetener
2pcs medium egg
1.5tbsp Active dry yeast
1/2tbsp table sugar
240ml Water or unsweetened almond milk
30g Unsalted butter
1/4tsp Himalayan salt
Measurements can be seen on the video
Whole Bread can make 14-16 slices
Macros per slice (whole bread 14 slices)
Calories 112
Fat 4.92g
Carbs 7g
Net Carbs 3.16g
Protein 12.41g

OMG 😮!!! So I was super reluctant to try this recipe as I’ve experienced one too many horrible keto bread recipes that were incredibly difficult to eat as a bread substitute. Anyhow I noticed that this recipe didn’t call for the inclusion of ground flaxseed or psyllium husk so immediately thought it must produce a better more bread like texture. I can safely say this is probably the best closest to actual regular bread recipe I have tried in fact I would say it somewhat reminds me of a brioche loaf. I sprinkled some sesame seeds on the top before baking and that’s the only change I made to the recipe. It’s wonderfully soft and springy, lots of holes in the texture which makes it light and airy, tastes like a slight brioche loaf due to the added sweetener and I’ve just scoffed down my first slice with some butter, my 9 year was curious to try some so I gave her the rest of it and she said “mmm this tastes like regular bread”. I cannot thank you enough, I’ve been on keto and low carb for two years now and to date I have not found a keto bread recipe that I felt was as good a real bread. I intend to slice this up and freeze it so I can defrost and use when needed. I cannot thank you enough and it feels so much lighter on my stomach compared to the flaxseed and psyllium based recipes which I just felt after a few bites became quite sickly to eat and also the texture they produce is more of a dense sticky rise as opposed to a light and airy one as in your recipe. Sorry for the really long comment but I’m super excited about my keto loaf and can’t wait to make it again once I’ve gone through this 😊🙌🏽❤️

We made your recipe in a Cuckoo bread machine (Settings: Light, 1.5 lb, gluten cycle) and it came out excellent! We absolutely love it! I converted the recipe to use cups instead of grams as follows: 2 Tablespoons Oat Fiber, 1 Cup Vital Wheat Gluten, 1/2 Cup Almond Flour, 1/3 Coconut Flour, 2 Tablespoons Butter, and 1 cup Water. We are so happy to have an excellent white bread recipe. Thank you!! 💙💙💙

Thanks I’m going try. Probably won’t get an answer on this.p, but did you proof the yeast and add it to the bottom of the bread maker? Or did you do the well for the yeast In the center? I have killed my yeast few times and I really want to try this recipe because another one I tried tastes little rubbery for my liking and this one uses less gluten

It looks good, I need a bit lower in carbs....maybe I can swap out some of the higher carb items like Almond flour coconut flour for an egg white protein powder bamboo fiber and more xanthan gum.

I just tried this recipe, it looks and feels like bread. It is very firm and works well for toast and sandwiches and anything you would use bread for. But it does not taste like bread. It is very chewy, have to chew on it a bit before it can be swallowed. The taste is very neutral and bland as well. But for keto this will do nicely. I will experiment with the recipe to try to put flavor into it.

Hi there ❤️ you’re awesome❤️ liquid temperature is the key ☺️ 120° F-130° F (49° C-55° C) With this Liquid temperature, it usually makes my yeast and water to activate. 😊

I am gona make some hamburger buns out of this recipe with some sesame seeds on top ,as the bread is nice and white .I usually make kito kings loaf recipe and add mixed seeds with it l love it but need more white bread for when I have burgers.

Does it feel rubbery in your mouth at all? I remember trying a bread recipe I think Diedras with vital wheat gluten but I didn't like the texture was so rubbery lol

Hi Farzana ❤️ that rubbery texture is common when you use vital wheat gluten. I also noticed that if you knead the dough too long it gets more rubbery. The dough should be still really soft after the kneading process to make the bread less rubbery. ❤️

Hi. Thank you for the recipe. how much table sugar do you use? In the video it says 1/2 (one half) tablespoon, but in the notes it says 1.2 (one and two tenths) tablespoons? Thank you.

Hi! ❤️ definitely, you can substitute any keto friendly flour you wish to use. There is a down side to it, this will change the texture and taste of this recipe. I have not tried this recipe with no coconut flour. I have other great bread recipe I’m sure you’ll like. It does not contain coconut flour.

Hi Carol🥰 thanks so much for subscribing to my channel❤️ I kneaded the dough with the hook for a total of 5-8mins. Stopping & Checking it about 3-4times until I have reached the right firmness. 🥰 your dough should be firm but still very soft at the same time. Don’t over knead ❤️

I replaced coconut flour with lupin flour, and it came out with earthy flavor. Is it because of yeast or the lupin flour? Or does high gluten flour have this taste?

Hi! ❤️ unfortunately you cannot replace oat fiber with almond/coconut flour. This recipe needs a little bit of OAT FIBER (not oat flour or oat bran) to make the dough rise like the ones made with wheat flour. I actually tried substituting oat fiber with oat flour for my friend, it works but the whole recipe has much carb content. It’s all about how you manage your carb intake, i guess you can use oat flour for the mean time. I hope this helps, thanks so much ❤️

Hi! Using oat fiber is very important if you’re aiming to create a bread with low carb content. You can work with oat flour but your bread will have higher carb content compared to my recipe. It’s all about managing your carb intake, I guess you can try with oat flour. ❤️

Just take equal amounts of old fashioned oats and put it in a blender. Blend till a flour, and you have OAT FLOUR!

Hi Sarah ❤️I don’t have a how to video of that particular keto pull apart buns shown in the intro. I made that buns months before I started Making how to videos. Rona, ketoserts milk bread with yeast, same thing. Done that! It is really good, but do not like it when people act like THEY invented the recipe for their own accolades like horribly obnoxious Rachel Ray...such a genius in the kitchen. Hi! Unfortunately this recipe is not gluten free. I have tried making keto bread without vital wheat gluten but they just don’t have that bread like feels and they require a lot of egg. I will keep trying making keto bread without vital wheat gluten so people with celiac disease may enjoy keto bread as well. ☺️❤️
