Out of all the pork rind chicken recipes I’ve seen on KZbin, yours came out looking the best.

Kid tested, big guy approved! I'm going to test this recipe tonight but I'm thinking about adding some nutritional yeast to the "breading" in hopes of a very consistent coating around the chicken. Perhaps this is a terrible plan. We shall see. Either way, congrats on your success on the keto diet! I lost 40 pounds in 6 months last year on it and feel great. Thanks for posting this!

I buy keto pork rind panko in Walmart. They have Cajun, Italian, Parmesan flavors. Easy time saver.

Let me know how it turns out for you. Someone in the comments mentioned it's easier to put the pork rinds in a bag or leave them in the bag they came and smash them

I'm not keto but I've been lifting for a month and do the body builder 40-40-20 protien carb fat . But that's besides the point what I'm getting at is when I want crispy chicken this is how I fix it it's like protein on protein and it's delicious

Put pork rinds in a bag and smash them. Faster and no parts to clean. I'll have to try this recipe. Looks easy-peasy.

Haha that's what I do! I put them in a ziplock and pound the tar out of them with one of the meat mallets, the kind with the tenderizer on one side and flat on the other. It's great, especially at the end of a long day when you can just pound your frustrations out on some pork rinds.

I've tried this approach and usually end up tearing the bag before I'm done. Personally I prefer the bullet technique.

@@mike260 The flat side of a mallet is faster and best because you don't want it pulverized by using a blender. Just place a kitchen towel over the bag before you whack it. Works without tearing the bag. Been there, done that and found the solution.

If you put your eggs in a large ziplock bag you can toss in a bunch of chicken and smush it around then use a fork to take it out, put it in the coating mixture in an 8x11 baking dish and stir several pieces at once with a pair of tongs. Time saving and no dough fingers. Will trim your time by 2/3.

You have to look at the ingredients because some companies like to add sugar or something with carbs.

I showed everything I did in the video. A lot of seasonings have sugar or carbs, so you have to be careful.

+Enlightened Spirit I showed the recipe in the beginning and it says 18-20min. I also explained my oven is junk so I have to take 5-10min off the time. Because of that, I didn't want anyone using my time as the standard. It only took 15min with my junk oven.

Ok...thanks. I couldn't read the time listed on the recipe in the book. I just made some chicken strips for lunch this afternoon and I cooked them at 400 for 15 minutes. They were perfect, but FYI, my tenders were a bit smaller than yours. Thanks for the recipe
