Hi Dennis! I made this recipe (no corn extract though.) Then I used it to make "cornbread" stuffing for Thanksgiving. I took one batch of the pragmatic and put it in a food processor, I then added a diced small onion, 1 cup of diced celery, salt, pepper, sage, a hot Italian sausage, 4 tablespoons of butter, 2 eggs, and 2 cups of chicken broth. Mixed the ingredients together and put it in a baking pan. It was indistinguishable from regular cornbread stuffing/dressing. I also made cranberry sauce. 12 oz of cranberries, 3/4 cup water, 1 cup of monk fruit erythritol blend, orange zest, and 1/2 tsp of vanilla extract. OMG!

With low carb and keto recipes, ive found that the difference of a gram xan have a big impact on a recipe - which sometimes isnt easy to do correctly with measuring spoons.

I just realized what your narrative style reminds me of. Its the movie "stranger than fiction" with Will farell and Lea Thompson . Lea is an author writing will Farell's character and the whole movie you see Will farell living out the words she is typing out in real time, the narrator in the movie has a similar style. I made this tonight! It's really good. I can't say it tastes exactly like the real thing, but it's very close, and the texture is perfect. I didn't have the same corn extract, it could be that Amoretti is better. I used Deiman, artificial food flavoring corn concentrate. I bought it some time ago, but this is the first time I've used it. I used the first recipe, the pragmatic, but added the flax meal from the foodie. I also added more allulose, I like my cornbread a little sweet. I didn't think my cast iron skillet would fit in my countertop oven, but it did. So pleased I could use the skillet for this! My real oven quit working a long time ago. This is an outstanding recipe. Now I can have beans and cornbread again, one of my all time favorite things. Even if I have to go light on the beans.

I love your channel!! Suggestion: try baby corn for flavor and texture. It has very few net carbs per an entire can (check brands). Chop them fine and voila! Corn flavor and texture at a low cost with very little carbs! Note: if you have tried this before, disregard this suggestion...😊🙃😁🤣

Liquid should work as well! Unless one of my recipes calls for powdered specifically, any form should work - unless we're powdering the top for something like a tarte caprese. The bottle should have a conversion from powdered to liquid form

@@BlackTieKitchen I southern delicacy is buttermilk with cornbread in it. It is a dying delicacy because the younger folks have not embraced it. I am a child of the 50's and 60's and I grew up in rural middle Georgia. My Aunts, Uncles and my Father introduced me to it and I love it. Just crumble the cornbread up in it and eat it with a spoon. YUM! Give it a try.

Ive had a few requests for that, so i will be investigating soon! My initial inclination is that we need to make the batter a little more liquid, but also add some binder to is so that it sticks. Corn dogs tend to be more spongy than cornbread, but that's my initial thoughts 😅

My food processor is a Ninja all in one system (I have it linked on my site). It could be better if it had the little entryway you could add stuff to as the blades are spinning, but overall it works great. Im not sure about the OOOFlavors as Ive never tried them. Id suggest trying the recipe without the extract first and see what you think - if you really like it, imagine what it would taste like if it had the corn flavor then decide then, because it IS expensive 🤦♂️

Super moist, reminiscent of Jiffy corn muffin mix. The almond flour provided the “graininess” similar to cornbread. And, unlike cornbread, the keto cornbread was still moist the next day. 10/10, will bake again 👍🏻

Dennis since you seem to always answer my comment ill just ask here. What changes would you make to convert this into a corn dog breading? I've been using my own carbquick varient and adding the corn extract and its been good but just curious if you've given it a crack personally

Hmm... Corndog bread would be interesting because youd need a way for it to stick. If you're dead set on wrapping a hotdog on a stick, I might consider adding some wheat gluten and maybe a binder like xanthan gum/guar gum. If not, you could possibly make something like corndog blocks - create the batter into a square pan and then rest the hot dogs inside, then cut once it's baked. Im not sure how this batter would do if fried, so I wont even guess, but you could maybe do corndog bites to try. Small bits of corndogs covered in the batter and deep fried. Just my initial two cents! But def something I will add to my list of things to try!

@@BlackTieKitchen so I've made a "batter" if you will like i mentioned with carbquick but changing it to better resemble a thicker cornbread consistency and just using the corn dog machine you can get off Amazon. It has 6 slots. You drop the dog in cover it with batter and cook it that way. I haven't tried to convert it into a type of batter like you are hinting at that one would use by dipping the dog and dropping into fryer. But I gotta be honest man. I can just tell how much effort you put into your recipes so I've been just looking at your recipes instead of everything.

New to your channel. Can I use organic skim milk instead of heavy cream, and regular flour instead of flax seed and coconut flour? I do low carb, high protein all the time, but rarely use flax seed in recipes. You can try - but I can't guarantee anything as I havent cooked with flour in some time. By adding flour, it will change the composition as well as the hydration levels (and won't really be that low-carb anymore).

I was just curious if we could substitute flour, and skim milk for heavy cream. I never use heavy cream or high fats in cooking. Allulose would make it sweet. Any subs for those of us that don't care for sweet cornbread? If allulose adds moisture than it might turn out dry if I leave it out. Thanks

Allulose will hold moisture and it isn’t necessary, but it adds that little bit of sweetness that corn typically has. I’m personally not a fan of sweet corn bread - it’s best saved for corn fritters 😂

I do not. All the low-carb flours are so specific that if you were to simply replace it with something like coconut flour, youd need a lot more moisture

Tried OOOFlavors cornbread concentrate. Tried adjusting the amount according to their cornbread recipe. May have to open piggy bank and do Amoretti... but will experiment a bit more with this cheaper one at least until it's gone. Have you used any of their flavors? (Seems vaping folks love their stuff according to the comments... lol... I got an education 😆)

Im not familiar with BaconUp bacon grease. You can use any grease you may have - I just didnt have any around 🤦♂️ I was under the impression that amoretti was an extract. If it's not, it's one of the better flavorings on the market. The others... Taste too artificial (cant explain the taste well)

Id agree for typical cornbread/muffins, BUT these already have so much fat and flavor, that adding more butter did nothing (I ate A LOT of these when testing). If youre not as strict with low-carb, then a little honey is an amazing topping for these 🤤

Great corn bread Sweet as all get out. so while i was making this i told my self 10tbs of Allulose man that's a lot. Don't get me wrong the corn bread was perfect in my opinion but i still had to check your measurement. 10tbs of Allulose is way more than 50g. However 10 tsp of Allulose is right on 50g. lol, no wonder mine was so perfectly sweet. Your a great guy and you have some great recipes but you might want to check for typos.

This is true. The one thing is, corn extract to me feels like it's be more difficult to create than a standard extract, say vanilla or orange, etc. Have you made corn extract? What was your experience?

Oh my word! When you pulled the cast iron pan out of the dishwasher, I almost passed out! Is that even possible to do? Also, it is permissible to allow bacon peices in the cornbread. In fact, back in the day we used all bacon fat and some bacon. We saved bacon fat on top of the stove in a coffee can. Most of us are still alive and kicking, even though who knows what kind of toxins we sucked up back then. Heat that pan up a bit with more bacon fat before you pour in the batter, just to ensure a little crust on the bottom of the cornbread. You're not from the south are you? I subscribed anyway. I wont hold that against you.😃

Haha, putting the cast iron in the dishwasher is a complete no-no! Just a little something for the people that use cast iron 😂 Ive live in florida for some 25 years now, so I have a tinge of south in my. I keep my bacon grease in a ramekin next to the stove - but use it regularly 😂 the reason I dont add bacon bits is because I find bacon can overpower a lot of low carb breads and such as there's no flour to dampen a lot of those strong flavors! Glad youre subscribed! Hopefully I can entertain and inspire!

Being lowcarb allows ne to use more fat then I have used in years. My A1c, and cholesterol have improved immensely. Lost weight too. That was not my main goal, but all and all, I've grown healthier with bacon fat. 🤣🤣

I wanted a more subtle flavor! I find that non flour based baked goods take on the flavor of things much easier (e.g. bacon), so I wanted to have a bit of the bacon essence, but not have it overpower everything else. Also... I ate all the bacon 🤫😂

It's always interesting to see the different viewpoints - similar to the fact that on the west coast, there's no such thing as 'sweet tea.' As an FYI for anyone who might wonder why we add a but if sweetness to this cornbread: corn naturally has some sweetness which almond flour lacks, so we need to make up for it. Now I'm curious if the reason for sweet vs un-sweet really came down to the species of corn 🤔

Corn has a specific sweetness, especially depending on the type of corn (e.g. sweet corn vs feed corn, etc). On low-carb/keto cornbread, we dont have that sweetness we would get from the cornmeal, so we have to add some sweetener. For real cornbread, I personally dont like sugar in my cornbread.
