I have tried so many low carb tortilla recipes that have left me disappointed. I've been tweaking this recipe for a couple of months trying to really nail the taste and texture of homemade masa tortillas, and I'm really proud of how this turned out.
Be warned: this recipe is a little bit of work, but it's totally worth it. And after you've made it once and have a feel for the flow, you'll be banging these out regularly. Recipe is listed below. I can't promise you'll get the same results if you make any substitutions.
In terms of the extracts/flavoring, you will get 24 batches out of a bottle of Amoretti and 12 batches out of a bottle of OOOFlavors. Based on the prices on Amazon, you looking at using $2 worth of extract for each batch (or 25 cents per tortilla).

UPDATE: Many of you have asked, can you fry or bake these tortillas to make chips? Based on my experiments today, the answer is a definitive "NO". The coconut flour in this recipe gives these tortillas great pliability, making them awesome for tacos and enchiladas. However, coconut flour holds way too much moisture for these to effectively be deep fried. I will need to play around, perhaps with almond flour and some finely grated cheese to see if I can make a dryer tortilla recipe that is specifically for being made into chips -- because, like many of you, I could really go for some loaded nachos that taste "real". On the subject of taste, I'm continuing to work with extracts to tweak the flavor on these. OOOFlavors "Corn Tortilla" flavor shows promise, but I need to figure out the right ratio and if it benefits from the combination of any other extract. If I could get away from using baby corn, that would speed up the cooking process and satisfy the clean keto folks, but it will likely increase the cost due to the extracts.

Wouldn't an air fryer help to dry out the moisture evenly and gently? Maybe worth a try.

Lupin flour is similar to coconut flour and doesn't hold as much moisture..am going to give it a try. This looks so awesome..looking forward to enchiladas!!

I've been desperate to find a good corn tortilla that's low carb, dirty keto, something so I can make tacos and enchiladas. I get that deep frying is a 'no' but what about drying them in the oven?? I need chips for my Chile con queso!! LOL

Also, I did a little math because some of you may be wondering if these extracts/flavors are worth purchasing. I made a keto, almost carnivore, cinnamon toast crunch cereal for my nine year old granddaughter. When I offered it to her I poured cream over it. I told her this was going to be HER cereal and I really needed her honest opinion. If she wanted more or less sweet or if I didn't get the cinnamon right I needed her to tell me. The kid's eyes actually rolled her eyes closed with the first bite. She kept chewing then gave me a big thumbs up. After finishing the third bite she grinned at me and said, "This is BETTER than cinnamon toast crunch, grandma." I felt like I won the Nobel Peace Prize. She's given me another challenge. To make her a coconut cereal. My frustration is that I still have 'covid nose' and it's really a struggle to dial in the flavors. I'm going to have to recruit the kid to help me get it right. I love these videos so much. I never thought I could invent my own recipes, but now I'm doing it! All began with this channel's inspiration. Thanks, steve!

It really takes away that "green" flavor that baby corn has. I probably could have coaxed even a bit more flavor out of the corn had I flipped it and roasted another 5-10 minutes (which I'll probably do on my next batch). 😋

I come from a family that always made homemade corn tortillas. I made you recipe last night. I skipped the pork rinds and I use bacon fat. Tortillas were not bad at all and they hold the food better then corn tortillas. Thank you so much for your recipe.

Okay, so I know I'm a day late and a dollar short on my comment, but I had to tell you: I made these over the weekend and they were fantastic! Who cares about the title ( keto, paleo) if you your interested in the recipe and it fits your life style, then fine. Some people think their PUREST and that’s the only way . @@1955dmb I agree! Life is too darn short to let people bring you down. I did not think I would like Keto because I love my bread and pasta and did not think I could ever live without it. So far, Keto has been easy and with all the ideas and recipes like Steve's, I don't feel I am being deprived of bread at all. Now if he could just develop a noodle recipe so I can have macaroni salad! :)

@@sandys7118 YES!!!!! Egg noodles. Macaroni. Spaghetti with the closest proximity to real spaghetti noodles. Lasagna... because I'm not supposed to eat those noodles my brain & stomach still WANT them. Probably want them worse because it's a no no.

I've lost 97 lbs. using canned baby corn. I use it for Keto Cornbread and topping for Tamale Pie Casserole.The baby corn I use only has 3 nc for the whole can. Can't wait to make these!!!!!

@Debbie L. Are you also using the flavorings with your baby corn recipes? I avoid artificial flavorings, not sure if these are natural or not. Also, I would love to have your recipes, if possible. Yesterday, I made a lower carb chili con carne and was a little sad to not have cornbread to go along with it.

@@greeneyes6311 Nope, I do not use the 'Corn Flavorings' simply because they are too expensive. The Keto Cheddar Bay Biscuits are a must-have side for Chili and Soups also. I use DYNASTY brand baby corn because it only has 3 net carbs for the whole can. Here is the Cornbread recipe I use. It is from CJ's Keto Kitchen: 2 C. Almond Flour 1/4 C. Coconut Flour 1 T. Baking Powder 2 lg. Eggs 1/2 C. Butter, melted 1/4 C. Sour Cream 2/3 C. Roasted Baby Corn, (blended) Liquid Sweetener drops to taste. ( I use 4 or 5) Mix and bake in an 8x8 baking dish for 40-45 min.

Cheddar Bay Keto Connect biscuits to go with the chili, they are good, but I've always made corn bread to go with chili so did miss them. I'll definitely be trying the CJ's corn bread recipe. Again I am far behind the power curve, but thanks to you, you have disproved what I was told about a Keto life style. With your recipes it is possible to have the old comfort foods but still maintain a Keto life style. I am in food heaven again.

I plan on working on a tortilla that falls somewhere between this one and the one that uses paneer. My goals are to simplify the process (no roasting of corn), adapt the recipe for queso fresco (instead of the harder to find paneer), and get something that can be fried up as a tostada or as tortilla chips. It will not be clean keto, but it will definitely be low carb.

I made these to go with some pulled pork and oh man, you have a winner here. The only pork rinds I had on hand we pre ground with other things mixed in like protein powder and Parmesan cheese, so I just used that and I didn’t have the corn bread extract, so just used the one flavoring I did have. On top of all of that, I thought my dough was way too dry, so added water. That was a mistake, if I would have kept kneading the dough it would have been fine. After all of my bloopers, the tortillas still came out fantastic, now that is saying something about a recipe. I can’t wait to try them again with the right ingredients. Thank you so much for creating a tortilla shell that not only tastes good, but can bend and fold just like it’s meant to be.

Roasting the corn has a huge impact. Regular baby corn just tastes too "green" to me.

OK Steve....I just made Pork Barbacoa Tacos for lunch! The first tortilla turned to mush because I poured oil in my pan, not realizing that you said you used a dry seasoned skillet. So after I used a dry skillet they turned out wonderful! I froze the other 6 portions for Taco Tuesday. Thanks so much for your time and effort!! (*!*)

Jack & Tracy Van Dolah... have you tried any of the tortilla recipes created by Petra on "NUTRITION REFINED" ? She has some really good ones. Also "KETO CONNECT" does as well... and I MUST say they also have the BEST OF THE BEST KETO BUTTER PECAN ICE CREAM!!!!!!! I tweaked the recipe by avoiding the shaken mason jar method & put my mixture into my KA Stand mixer instead, and using the paddle attachment let it mix until it almost doubled in size. Then i put the mixture back into the jar ...but next time I'll use an airtight shallow rectangle, something easier to spoon it out of.

Purely amazing. You do all of the work I just don't have the time, energy, or brains to do. I appreciate the fact that you are relentless in your efforts. This will help so many people to stay (in my case, go back) with keto in order to better themselves. YIKES Steve, looks like you rattled some cages and pissed off the trolls. Too bad for them. This looks brilliant! Sad for me, Amazon will not ship the extracts to me here in Mexico, and there are none available here, but my Niece is coming soon, and she will bring me some in her luggage. Thank you for your diligent efforts here. Once I get everything, I will let you know about the other dishes. (Empanadas, Tamales, Etc) Oh! BTW. Got to try the "Paffles" today with the crushed pork rinds. They were really good and stood up well. Got really crispy too, which is definitely something we were missing on Keto. I do, or did, the traditional Diane Kennedy versions, with pork and chicken picadillo stuffing. They are a lot of work, and after all that work, my son prefers his stuffed with cheddar or even Oaxaca cheese. When I have guests here, I would love to try out a Keto Version of our favorites after careful, through testing and sampling. Thanks Steve! You are the best!

I'd love to go to Oaxaca. As I understand it, it's pretty much THE culinary epicenter for mole. Incidentally, since mole is very keto-friendly, I'll have to see if I can come up with a relatively simple version that can be served over enchiladas de pollo for the keto crowd.

@@SeriousKeto Hubby and I lived in Oaxaca State for a year and a half and we still found New Moles every time we went up the hill to Oaxaca City for Sam's, COSTCO, and Home Depot. We lived in Puerto Escondido before coming to the Yucatan. My Profile picture here is from Monte Alban, the incredible Ruin there. I already serve my Moles on Cauliflower Rice with little or no issues. Just be sure it is well cooked, and best once frozen before you use it. Takes away the bitter taste of fresh. There is so much good food there. Street food is amazing. AND Chiles Rellenos Nogada is a very non Keto dish that is incredible. One of my absolute favorites though is Huitlacoche. Corn Smut cooked. OMG as a sauce for a good cut of meat, grilled, Keto and everything. Got to stop now. Getting too hungry. Thanks again.

Well done, by friend! I can't wait to give these a whirl. I've always hated the Keto Connect tortillas, not that they haven't given us some other great recipes. In fact, try Matt's Gooey Butter Cake, if you've never tried it. It's incredible. Looking forward to enjoying tacos again for the first time in more than two years. Just ordered my One on One Flavors (OOOFlavors) Corn Bread Flavored Liquid Concentrate from Amazon. Oh, and I tried you're chaffles recipe the other day, and wow is that a game changer. I even made Reuben, and wow was it ever good. I know everyone says chaffles are a game changer, but now I understand why everyone says that, as they truly are. Yours is one of the best keto channels to come along in a long time.

As I was making keto deep dish pizza crusts in my waffle bowl maker last night, I couldn't help but think that we live in a wonderful time. I did Atkins 20 years ago, and fell of that diet because it was so restrictive and there were not the options and cooking methods we have today. It's a good time to be keto. 😀

I have a lot of shirts I really like (both pop culture t-shirts as well as nice dress shirts) that now just look like tents on me. Pants I couldn't dream of fitting into a year ago now fall off me if I'm not wearing a belt. Having to buy new clothes is the one major downside to dropping a bunch of weight...

Just wanted to give you an update! I froze the dough, thawed it, and left it in the fridge for a week. It survived and tasted great. It did get a little crumbley but came together nicely when kneaded. For the amount of work involved, it's really nice to be able to make bigger batches and freeze the dough.

I cant wait to try this!!! I used ground baby corn with a microwave almond bread cut into cubes, for my sausage stuffing for Thanksgiving. My internet was out so i couldn't look up the low carb recipe i was going to use so this is what i came up with. It was so good its my new favorite stuffing idea...great job!!!

I've sealed them with a Food Saver and later thawed and reheated them just fine. I'm not sure how just a regular ziploc bag would work because you'll get some frost and crystallization in the bag that could impact the flavor and structure.

Wow, this recipe looks brilliant! I’ll have to start acquiring the tools before I try them so it might be awhile. It will be absolutely wonderful to be able to have “real” tacos! Curious why the carb count would be so different between brands. Does the higher count one list added sugar in the ingredients? Yes, someone might very possibly try to claim it as their own. Hopefully people will call them out on it. Many channels, however, like High Falutin Low Carb will feature another’s recipes and will give full credit to the original creator. Not too long ago though, many channels and FB pages were featuring Diedre’s Keto bread without giving her credit. Thanks for the recipe

I probably shouldn't have even put that bit in there, but I've seen folks that appear to have blatantly copied recipes from Keto Connect and not given any credit. Like also said, it's completely possible (especially on something like a microwavable bread that has 4 ingredients) that two people will hit upon the same recipe. I am just really proud of how this turned out and was fearful that a channel with far more subscribers could bang out the same recipe video and mine would be buried.

I know that I'm over a year late on this recipe, but I'm so glad to see someone use roasted baby corn in a corn tortilla recipe!!! I found a recipe WAAAAAYYYY back on the Low Carb Friends site (now defunct) for low carb tamales using roasted baby corn and I'm horrified that I didn't save it because now that the site is down there's no finding it. Ever since I tried that recipe, though, I've been using baby corn as a substitute in soups and casseroles where a little bit of corn influence would work. I even added some to an almond bread recipe to make a sort of cornbread (worked great, but almond bread is super calorie dense so I couldn't really have more than one cornbread muffin at a time). I'm going to be giving this a try as soon as I can get my hands on those extracts!

Once I complete my 100 hour fast next week, that's something I want to do. We used to make tamales all the time before I went keto. Most people don't have the time or patience to make tamales, though, so I'm not sure how popular that video would be.

This tortilla recipe could be tweaked a bit to make the masa softer to use for tamales. It would be worth it to be able to run the yearly Christmas tamale assembly line at the kitchen table again!

I wonder if you upped the lard content if that would be sufficient to make a softer masa as Maria notes? My memory is it was mostly shortening and masa flour when I made it from scratch. Could you dehydrate the roasted baby corn to make a flour?

I think it has to do with what's added to the baby corn. I'd bet some add sugars (hfcs) to the canned corn to artificially sweeten it up.

Keto Police here.... just kidding. But for those of you who are, I found Native Forest organic baby corn at my grocery store and also on Amazon, USDA Organic would make it Non GMO. Ingredients: Organic baby corn, water, salt and citric acid, nothing else added. I believe this would make it ok on Clean Keto.

I have made homemade tortillas for years... my grandchildren live for slathering them with butter, hot off the griddle... and I rarely have had even one since starting keto this past January. I will be ordering the corn extracts and psyllium husks today... already have a tortilla press and two cast iron griddled... I am more excited to try this recipe than ANY other keto recipe!!!

Two skillets or a two burner skillet make this job go much more smoothly, so that's good to hear. You may even find you want to do a double batch and freeze some.

You could always use a rolling pin, but a tortilla press is just SO MUCH FASTER. Well worth the price if you plan on doing these on a regular basis.

Steve!!! Thank you for this recipe. I just barely watched it looking for some specific things in the recipe. I had seen the use of baby corn on Keto Asian Flavors to make corn chips but not tortillas, and the use of the sweet corn extract in cornbread on Black Tie Kitchen. So I was hoping to see both of those in a tortilla recipe. But your video preceded both of those substantially. I also appreciate the tip regarding the carb count on the baby corn. I've been watching your videos for about 6 months and I have learned a lot. I love the fact that you are not afraid to tell the truth about whether or not you like something. Not even afraid to spit something out of your mouth on camera and be honest about the taste. Thanks again for this video. Even though it is older, I am grateful to find it!! I love to make cow tongue and want to do a keto Al Pastor next week on my vertical rotisserie. You just can't really eat either of those types of tacos on anything but a real corn tortilla!! I look forward to testing this recipe out!!

I still need to experiment and figure out the best way to do that. These tortillas are a little to thick to be tortilla chips. I'm thinking that rolling them out bigger and thinner with a rolling pin, then skillet cooking them, then cutting and frying would be the way to go.

I have a full closet full. So many cool ones and they are all just gigantic now. On the positive side, I used to only have one pair of pants/jeans that I could fit into. Now I have over 30. And most of them require a belt so they don't fall off me. 😄
