Keto Fried Chipotle Pepper Poppers is and easy and delicious appetizer or shack for your upcoming party. Just 1 net carb for 1 small popper or make them bigger and for 2 net carbs. If you want to ditch the fried fat head dough, the filling makes an awesome cheese ball or dip.
Keto Fried Chipotle Pepper Poppers
Dough
8 ounces of Mozzarella cheese
2 ounces cream cheese
1 egg
3/4 c almond flour
1 tsp of seasoning
Filling (reduced amount just for filling, if you want enough to make cheese balls as well, use the amounts in the video.)
4 ounces bacon, cooked crispy and chopped
4 ounces cheddar cheese, shredded
2 ounces cream cheese, room temp
1 chipotle pepper in adobe sauce, finely chopped
Make fathead dough by combining mozzarella and cream cheese, melting together in microwave at 30 sec intervals, stirring in between heating. Do not over heat.
Stir until smooth, add beaten egg, almond flour and seasoning. Mix until well incorporated.
Roll out half the dough between 2 sheets of parchment paper until the thickness of a quarter. Use 3 inch cookie or ravioli cutter to cut out circles. Leave on parchment paper and remove scrap dough to add to rest of dough. Using new parchment paper, repeat the process until all the dough has been rolled out and cut. Put cut dough in refrigerator to firm up.
Filling.
Take all the ingredients of the filling and mix together until well incorporated.
Take out cut dough and add about 1/2 teaspoon of filling to center of cut dough and fold in half. Crimp the edge, making sure it is sealed tight. (this will give you about 22 appetizers at 1 net carb each) For larger appetizers, place about 1 teaspoon of filling in the center of one round and top with another round. Crimp all around the edges, making sure it is sealed tight. (this will give you about 11 appetizers at 2 net carbs each)
Heat oil or lard (about 3 to 4 inches deep) to a temp of about 325 to 350. Gently (so as not to splash hot oil) drop poppers in the hot oil and cook until a deep golden brown and then flip. About 1 minute on each side. Remove from oil and drain on a wire wrack.
Best if eaten while still warm Can be stored in fridge for 2 to 3 days. Reheat in oven until crispy. Enjoy.
