What's the next big thing for chaffles? Chaffle bowls!!! Check out my recipe for Keto chocolate chaffle bowls and chaffles for ice cream. The bowls are of course, to be used as a bowl for your delicious Keto ice cream - store bought or homemade (let us know if you'd like us to make a video for our homemade ice cream, it's sooooo good). And the chaffles are perfect for a sweet Keto ice cream sandwich treat! You'll be doing a happy dance like I did once you try these recipes.

Now for the chocolate recipe:
1 egg
2 oz. cream cheese
2 tsp. vanilla
1 Tbsp powdered erythritol
1 Tbsp cocoa powder
Chaffle bowl - spray with oil of choice, and pour 1/3 of a cup (about half the batter) in the maker and close the lid. Let cook for three minutes, do not let it go longer or it will burn. Using a silicone spatula, gently release the sides and slide under the chaffle bowl to get it out (be careful because it will be hot). Flip it over on a ramekin or cup to cool so it retains its shape. You should be able to make two chaffle bowls.
Macros (approximate) per chaffle bowl: Cal - 144 | Fat - 10.2 | Tot Carbs - 2.6 | Fiber - 1 | Net carbs - 1.6 | Protein - 7.25
Chaffles - pour slowly into the chaffle maker until almost all of the iron is covered. Use your spatula to gently spread it around as needed to cover all of the iron. Close and let cook for 3-5 minutes before removing. Makes 3 chaffles.

To assemble the chaffle ice cream sandwich, let your ice cream thaw for 15-20 minutes. Then scoop the ice cream out; take it out of the pint and cut a slice; or if you made homemade ice cream, use a round cookie cutter to cut the perfect sized slice of ice cream. You'll put this in between two chaffles, then wrap in plastic wrap and put back in the freezer for about 15 minutes so they can set up together. Take out of the freezer, wait about 5-10 minutes, and enjoy!
Greg's Keto Vanilla Ice Cream Recipe (Dairy Free):
2 cups full fat coconut milk (we use Thai Kitchen Organic amzn.to/2ZevYLm )
1 1/2 tsp vanilla
1/3 cup erythritol
1/8 tsp salt
Follow instructions on your ice cream maker - makes two pints.
Macros (approximate) per pint: Cal - 360 | Fat - 31 | Tot Carbs - 6 | Fiber - 0 | Net carbs - 6 | Protein - 1.5
