I will just say that I am an accomplished chef who specializes in Cajun cuisine. The Roux in a gumbo is the key to the dish. Tonight I skeptically made my gumbo roux using your Perfected Keto Flour. Amazing results. There was just a slight micro grit ( almond flour ) texture that was barely noticeable and not a negative at all. Well done on your Perfected Flour formulation.. Thank you

Been subscribed for a while, I always revisit past videos. Was looking for a milk gravy recipe when I found this roux video. I need some biscuits and gravy in my life. I just made a batch of bread with your VKF 2.0. Using the small baguette silicone tray. It's late at night, but prepping for meals for the week. Thank you for all the hard work you do to help us all enjoy "normal meals" lower in carbs/gluten-free! ❤

Oh my gosh! Thank you! As a southern girl and cook, we need this roux for biscuits and gravy! I prefer brown flour gravy instead of sausage gravy so this is perfect!

Thanks for this video! Thanks also for the link to the silicon cube thing. As an old lady who cooks keto/carnivore for just myself, the cube thing will be great for portion control and freezing. I like just a little Rao's Marinara Sauce in many recipes - freezing the remainder of the jar in cubes and freezing will prevent a lot of waste. Looking forward to trying the roux recipe.

Very handy tip for a large scale roux base. Great little container you managed to find. Have made your perfected keto flour - its first creation is your chocolate cake (with the added baking powder) to be made this Tuesday. Looking forward to it. 😊🙏

Victoria, Thank you so much for your recipes! I make your Keto flour and have been loving it!! I was not sure if it would make a good roux, as I've tried with JUST almond flour and...uh? NO! it's "grainy". Is this roux smooth, as it should be? I'm from New Orleans, where we make Gumbo and stews often, but I've had to give these dishes up due to the roux! Add your favorite liquid and you will make gravy. That is what I will do.

When I was a kid, my mom frequently made a roux from flour and butter, and added milk. We called it “milk gravy” and often had it on potatoes.

Love your channel. I've been keto for about 3.5 years but my husband has only fully embraced this dietary option since November last year. He has been missing certain things, such as pasta, and your channel has given me inspiration to be bolder in experimenting. My mind is full of things I can make with this roux. I was wondering how much liquid can be thickened with a 2 tablespoon cube?

I’ve always made a Beurre Manie for my thickeners, gravy or soup, which is equal parts softened butter and flour. You simply mix them to make a thick paste or dough and then refrigerate or freeze and take out and bring to room them when you need it. I’m wondering if this flour will work that way instead of cooking it ahead of time?

I would like to use your Perfected keto flour in recipes for all sauces that call for a small amount of regular flour as a thickener. Can I substitute your Perfect Keto Flour in the same amount as the recipe calls for adding the regular flour…’like for like’ measurement? Thank you!

I make gravy out of straight whipping cream. You don't have to add any water or other liquid as the cream thickens on it's own...it does NOT act as a roux like this, but it makes a rich gravy. If I do have to thin, I will use broth for additional flavor.

You should look up her "biscuits and gravy" recipe and just follow the instructions for the "gravy" part. (It is a "milk" gravy)

I would think so. The browning is more for flavor and color. I use the same all purpose flour roux for everything. Just different amounts of flour to butter ratio for different thicknesses.

I am thankful for all that you do, but can you show us how to make a sub for a 10 oz can of condensed soup, like cream of chicken or mushroom? I used to always have them on hand for casseroles, etc., so I miss them in recipes. Would adding a cup of cream or bouillion equal one can?

@@victoriasketokitchen Thanks for your reply, but I was meaning something that equaled Campbells 10 oz can of condensed soup. I will play around and come up with something. Your recipe is more like a soup you would eat, not a thick glop of condensed soup. I love that now I can have the thickener in portions in the freezer ready to use.

Why does mine look like a ball of dough in the pan? I did 8 tablespoons butter (114 grams) and one cup (80 grams) of flour. I used the grams as I am in Australia.

If you use the NSKF 2.0 is also more absorbent. So add slowly and stop adding flour when u get a roux paste

@@victoriasketokitchen I should of read this first. It was like a dough ball. I added 2 Tbsp of butter to make it workable. Still like a thick paste but should work. I been having some trouble with this NSKF 2.0 being to absorbent. I think I going to switch to your old version.

So one of the many reasons I do Keto is that it mostly works well with a gluten free diet. What would the carb ratio be if I used a gluten free flour? Also where did you get your pan?

I tried this with the 2.0 & it was very dry. I added water & it still was dry & crumbly. What had I done wrong? Or is there a variation difference?

This was made with a different flour that is less absorbent. The rule is cup for cup not gram for gram
