Pro chocolatier here and I'm lazy too. What I would do is spread the chocolate out on parchment paper 1/8" thick. Drizzle the white chocolate over that and you can make gorgeous patterns in it with a chopstick. Then sprinkle the dry ingredients over the base and have the wet ingredients in condiment cups for dipping after the base sets up and you break it into bits. See. I told you I was lazy, lol.

I saw some other creamer flip the mold over quickly after spooning the chocolate in the bottom, leaving a lighter coating of chocolate on the bottom. She did this over parchment paper and then scraped the drippy chocolate off of the paper and put it back in the melted chocolate bowl. Hope that makes sense.

So , something you could try would be to take the filling and spread it out flat on a cooking tray and chill it. Then cut the filling to be smaller than the wells of your bar molds. That way you don't have to worry about "Walls" . you can just put the bottom layer of chocolate, chill it, then set your precut chilled filling in the center, and it will be away from all the edges, then when you pour the top chocolate, it will fill in and form walls on its own. ETA: They turned out fancy pretty!

I make cakesicles all the time. You’ve already figured out your chocolate was too thick. That’s an easy fix, just adding more coconut oil. And much easier to spread when chocolate is thinner. I use a small dinner spoon put in about 2 tablespoons of chocolate. Spread up in the middle and up the sides. Then freeze of course. Much harder on square sides, just takes more time. I don’t do the fill and flip over method onto parchment paper. Too messy. After I add my filling, I freeze again for about 10 minutes. Easier to spread the top layer of chocolate when cold. Then freeze again. Not sure I can get pistachio cream here in 🇨🇦. Not my fave. I’d probably do chopped cashews. I bought some protein bars that are pretty much all whey isolate crisps. Taste dreadful, but perfect to use up in the keto marshmallow cookie or this recipe. Thanks for being willing to try different recipes and make them keto. I’ve been searching for a keto angel food cake recipe. Something light for strawberries to go on.

I’m going to the U.S. in September and I think they’ll kill me if I don’t show up with any 🥹 Just FYI, the shredded phyllo dough is usually used to make kunafeh, a middle-eastern dessert that is SOOOOO good. It’s usually filled with cheese or cream and toasted on the outside. I’d love to find a keto version. Maybe the King Arthur keto flour would work? But I have no idea how to make the shredded phyllo lol; we need a Palestinian grandma for this! I think I’ll bring the real thing for the girls and make a keto version with them so I can enjoy too.
