Hello there, We've tried different ratios of lemon juice and sweetened condensed milk, too sour and too sweet are not yum, both are balanced is the best. 😊
Hi, can i clarify something.. ? do we bake with 175c with fan on or off ? The next day will the crust be still crispy ? I m thinking to prepare this for my best friend birthday.

Hi there, whether you bake with or without the fan on at 175°C, the results seem similar. If you're making it for your friend's birthday and want the crust to stay crispy the next day, I recommend refrigerating the baked lemon pie. 😊

Its my friend birthday tomorrow so i just did this pie awhile ago. The crust looks quite dry and not easy to press towards the mould so i melted another 30g of butter which resulted when bake oil flow out from the mould. (next time i should not add butter, sigh..) And i find that the sweetened milk is quite alot so i lessen it, ended up the egg and lemon mixture is so watery, so i added another egg yolk to it. Sigh.. i think my pie look like a disaster with lotsa bubbles on top. 😒 But one thing, for amount of biscuits i think its too much for the tray. Hope u can guide me again, sifu.
Hi! I fail at filling part. After bake the filling surface is full of bubble. May I know which step i did wrong?

Sounds like it's a little bit beating too fast or too much. Mixing the filling will often create many little air bubbles. To avoid this, you can use a stick or kitchen torch to 'pop' the bubbles. 😊

Taste is nice although is fail. I'm using low speed to beat. The filling is melting doesn't shape still.
