Hi Ken. You probably get tired of hearing my old stories, but I gotta give you one more. I'm 72 years old in 2 more days, but I remember very well when I was a kid and Dad and his friend Joe would catch a very large snapper on the bayou and bring it to our house to clean it, and the 2 moms would cook it. There was 7 kids in the lee family and 5 in the Sarvaunt family so it took a large turtle to feed all of us including the eggs. Watching you cook your turtle was like watching my mom cook turtle. except she used water cause we didn't have canned chicken stock "cost to much" and used tomatoes out of garden instead of canned tomato paste for the same reason. I am so glad I found your channel, you bring back wonderful memories. Have a great day Kendall....

Our rivers in Shannon County Missouri are all spring-fed clear running streams that produces Soft Shell turtles. We ate those instead.

I'm 73yrs old, lived in the upstate of S.C. all my life. We called snapping turtles cooters. Growing up we would make set hooks and set them out at night around ponds and creeks in the area to catch the cooters. We would buy beef hearts from a few local butchers to bait the hooks. Beef heart makes the best bait because they're real tough and hard to get off the hooks. We used big hooks we called cooter hooks. We made rounds all night checking the hooks. We kept the turtles alive in big galvanized steel tubs until we had quite a few before cleaning them all at one time. Then we would have a feast with all the family members and friends. Kids today don't know what having fun is. I did teach my grandsons how to do this!!

I was about 19 years old when my grandfather made me turtle soup. I was in the hospital at the time and he said I would never get better eating that stuff. When I tell you after eating that turtle soup i was out in two days. I miss my grandpa. 😢

My husband is in the army and we are stationed in Alaska. I’m from the south and my family still lives in Louisiana and Mississippi. Watching your videos brings me my sense of home and comfort. We love your recipes and videos!

My brother used to fix turtle all the time he was a good hand at cleaning them people would have him clean them for them a lot....he was also good at cooking them also....he always rolled his in cornmeal and flour if I remember rightl...I remember how good it was....I haven't had one I would say in over 30years...but I still remember how good it was

When my grandaddy was still alive we ate turtle weekly. He cooked about the same way over here in Mississippi. My kids even love till this day. Great job

Growing up in Southest Texas and the proud decendant of Cajun ancestry, I have experienced Snapping Turtle many many times before. This looks perfectly delicious. Well done my man! I could not have done any better myself! You are totally awsome! Keep these videos coming.

Hey Kendall, I'm a yank from the State of Wisconsin, but when I was stationed at both Pensacola Fl and Biloxi, MS in the winter of 98-Summer 99' in the Air Force I got hooked on that Southern Soul and Cajun Food!! I've tried countless so called authentic Cajun spots in both Chicago and Milwaukee through the years, and NOTHING COMPARES to being in the good old south for that amazing fresh cooking. I can't believe the size of those amazing blue crabs and how you guys caught 3-5 at a time down there. Yummy. It stinks watching all these great amazing food and food prep videos only to go cook a burger or brat on the grill up here in the cheese state. Please keep making more and more videos, I thoroughly enjoy them sir. In closing, I had an Air Force friend from outside Monroe, LA who let me go frogging with him one night and bugs aside I had a blast and the frogs were so yummy!!! Once again thank you for the very informative content and if you ever offer charters or ride alongs for crabbing/frogging I would totally sign up for sure! Thanks. Patrick from Wisconsin.

I enjoy your channel Kendall and you always make your dishes look so delicious. My granny would cook anything that we killed and brought home. I remember taking soft shell turtles that we would catch from the creek and she would pressure cook them and make a hash. Seems like onions, potatoes, turtle and salt and pepper. It was delicious over rice.

I'm in Virginia, and I've had about 7 or 8 turtles. I usually fried it up rolled in flour, and also made a turtle soup. Absolutely loved it

My grandfather taught me and my brother how to catch clean and cook snapping turtles. I've got one in my garage that I'll be preparing in a couple weeks. Great video.

My grandmother made turtle as often as the men in the family could catch them. My uncle and his wife did as well and My Mother cooked turtle when I caught a big one. Liked it!!! Rick

Some of my fondest memories are of my brother and I setting turtle hooks with my father. My father was a great cook. He always parboiled turtle first . Cracker meal, salt and pepper, deep fried until golden brown. Add the meat too a couple of slices of loaf bread and a home grown tomato. Good eating. My father was friends with a local game warden and he would help when he had time off.

We Ken added the garlic to the pepper and onions, I was wishing I had smell-o-vision. Never knew about calming down the musculature by putting it in the freezer before cleaning. Same reason to put eels on ice first! Thanks for the tip!

Cleaned a many a turtle before I was even a teenager but had a suggestion for you.....when we did ours we would nail the shell to a large board which held it in place while we cleaned it...made it a lot easier and kept it from slipping and sliding.

My family was living in an old farm house (it used to be a dairy farm) in Gonzales La. My brother and one of his high school friends caught a snapping turtle that was about the size of the one you cooked. We were fishing in a cow pond on the farm property. My brother and his friend dispatched, cleaned, and cooked it. Man, I tell you what, that was some kind of good!

The difference between ANY zoo in America and a zoo in Louisianna is that the other zoos have placards telling where the animals originate, diets, gestation, life span, etc., in Louisianna, the placard ALWAYS includes a recipe!😀

I have cleaned these turtles for many years and what I do to alliviate those "twitching" muscle spasms is, I cut off the end of the tail and use a 12 or 14 size piece of copper wire and run it up into the spinal channel and it instantly kills all the nerves - problem solved. BTW, great job, I like your cleaning method.

I've had turtle soup at Bookbinder's restaraunt in Philadelphia, Pa. They sell it in cans at the grocery store, too. For some reason I seem to remember that they changed the species of turtle they used in the 90's . I'm eager to try it myself with some fresh caught snappers.

Awesome! Ca c'est bon! I had snapping turtle once a few years ago. We went to a guy's house that my dad grew up and is friends with. He had caught it and cleaned it and cooked it just like this with tomatoe slices and corn and smothered okra. It was fall of the bone good! My family's from Evangeline Parish and dad grew up with a lot of this cooking and now I'm trying to learn.

In the 1990 I went to New Orleans twice a month on business. Loved the turtle soup and soft shell crabs at a place in Kenner just down the street from MSY...airport....Thanks for the memories.

My grandfather was an expert at catching them mostly by hand under the banks of creeks. He would pull them out by their tails and dump them in a feed sack that mostly one of the grandkids like me dragged along in the creek. We would cut their heads off and scald them in a big tub of boiling water, scrub clean, then cut the shells off, skin them and divide the meat. Some of the meat they would bread and fry, the rest fry in a little oil and onion, then slow boil in milk and butter. Topped off with a little hot ketchup and crackers. It tasted like salmon stew a little fishey but really good.

I had an uncle who ran a drag line for Orange county and everything he would come across a big Ole turtle he would load in the back of the truck and bring it home. Him and grandpa would clean and we would BBQ that suckered and oh lord it was so good. Thanks for 5he memories.

Not only are you a great outdoorsman, but a great cook as well, I had soft shell turtle when I was a kid, I haven't had it since I've been grown, I love it, now that I watched you clean it, I will be eating me some turtle, I never knew how to clean it, that's why I haven't eaten it... thanks for the tutorial on cleaning turtle

I grew up in northwestern Missouri on the river bottoms. We ate a lot of snapping turtle stew. Great stuff.

Grew up eating soft shell turtles we caught on trot lines. My grandmother would make what she called “turtle perlo”. Really enjoyed the video!
