That's not why he yelled at him, if you go and eat at any restaurant, your food is going to get touched by the chefs, which is why they wash their hands thoroughly throughout service. He was yelling at him because Louis walked up to the pass to tell him that the pork was undercooked instead of putting it back in the pan and y'know...cooking it.

Kitchen I'm in, we use red tongs for raw red meat, yellow for cooked meat. Blue for raw fish, and green for vegetables. But there is no way you can avoid having to handle food with your hands (I wear latex gloves a lot). It's a literal impossibility, hence why, as someone said above, we have sinks all over the place which you press your knee against the front of to get the water running. Personally I wash my hands after I've picked a steak out of a metal tin with red tongs anyway because there is probably some raw meat bacteria on the lid from when someone prepped and tinned it. As for what Scott said, I don't think he meant that Louis was handling raw meat, he just didn't want him wasting time ambling around the kitchen. But deffo wash your hands after doing something like that.
