Munchkin calls them pink muffins. They are a hit with my family and I got many good reviews of these muffins on my Instagram page.
Do you like beetroot? I love cooking and baking with beets. They have a sweet earthy flavor and make a beautiful pink color, which gets my kids excited. The best way to cook beets is to over-roast them. Taste and color are both richer this way. I included how I roast beets in this tutorial. You can roast a bunch at once and freeze. They defrost wonderfully.
Muffins are a great make-ahead lunch menu as they freeze very well. I like to defrost them by popping them in the air fryer. Hope you give it a try.
