Some suggestions here:) 1. Use green onions rather than yellow onions. Saute the chopped green onion in oil on LOW (it easily burns) heat until soft and fragrant then add kimchi - it'll create much better flavor and fragrance. 2. If your kimchi is TOO fermented, add half a teaspoon or so of sugar when you are sauteing the kimchi - it'll balance out the sourness. 3. If your kimchi is not red enough, add half a teaspoon or so of gochugaru (Korean red pepper flakes) for some color. Don't add too much as it can easily get too spicy. 4. Instead of soy sauce, try using oyster sauce. It'll give you better flavor:) Personally, spam is always the way to go with a crispy, fried egg but you can put in whatever you want and customize it. Enjoy! Add.) If you like seaweed (those seasoned, rectangle seaweed that us Asians eat with rice) either cut them up or shred them and mix with the fried rice. They go well together! You can also wrap the fried rice in seaweed and eat that way too:)

i just made this with spam and without sesame oil bc personally I'm not a huge fan of sesame oil but overall the dish was delicious!!! Thank you Dzung :D oh! and i added some chopped up kimchi radish i had too! adds another texture to the dish.

I discovered kimchi fried rice a few months back and have been obsessed. My last batch, I chopped Brussel sprouts and red radish since I happened to have those on hand and it turned out delicious! I amp mine up with extra red pepper paste 😋 I love how versatile it is!

Made it today by myself and it was delicious 👍 I didn’t have day old rice, so I just cooked rice, but added less water so the result was slightly dry, but fully cooked rice. I added that to the pan and added a mixture of water and more kimchi juice to “rehydrate” the rice so it was nice and fluffy, but not mushy :) Hope this helps anyone who doesn’t have day-old rice too!

We always have kimchi in our fridge, too! If it's old then we make Kimchi fried rice or Kimchi-jigae. AND I AGREE ON THE OLD RICE OMG. Better for fried rice! ❤❤❤

I finally tried it and it was REALLY amazing. Soft-boiled egg is a good tip to get a creamy texture instead of a sad dry rice (even though without the egg your recipe already gives a nice and soft rice) . I need to challenge myself and make my own kimchi next time !

I love kimchi I'm just afraid of which ones to buy in the store because some of them may have a lot of sodium in it. But I saw some recipes online where I could possibly make it myself. this is a great idea. I would substitute the rice unless it's brown today alright with cauliflower rice and I top it one time with the egg like you did and then the next time I would top it with avocado I love avocado is such a great fat. You're the best your baby is just adorable....

I love your recipes and cheerful approach to cooking! Heads-up, though. It's time to replace the nonstick cookware due to health concerns with PFOA-PFOS chemicals. Cast iron is a good alternative.

My usual go-to when I have no ideas and no time and am doing a few days on bachelor status when the wife is away on business is usually two tins of sardines, a half a fresh baguette or a couple fresh large sourdough rolls, a hunk of cheese (usually Emmentaller), and a bottle of wine. If I have a little more time (ie not getting home from work past 10), I will make a garlic and oil pasta with sardines or maybe a quick Carbonara, steamed broccoli, cauliflower, and edamame, and the wine. Sometimes it's just stopping at the supermarket for a $5 rotisserie chicken for the main which ends up being 3 meals - the dark meat, the white meat the next day in some pasta or stir-fry over rice the next day, and then on the weekend my wife makes a heavenly chicken soup using the bones and residual meat hanging from them. Whenever I am away on business she usually does some cottage cheese, fruit, and her favorite fiber cereal. When we are together I am easily talked into doing up a couple porterhouse steaks in my secret marinade or my "kitchen sink" spinach salads with pretty much everything: beets, white and red kidney beans, edamame, snap peas, baby carrots, broccoli, cucumber, celery, a little chopped tofu, sprouts, mandarin orange sections, peas, artichoke hearts, a poppy seed vinaigrette for her and blue cheese for me. The salads are quick and really filling!

I love making kimchi fried rice! I can't peel a soft boiled egg to save my life though. No matter how careful I am, I always break it before it is completely peeled.

Ahhh I know what you mean! Steaming it seems to be the easiest way for me. My mom told me the other day to cool on salt water and that works for her too. I haven’t tried it yet but I’ll let you know.

Does kimchi go bad? How do I know if my kimchi is just not expired or past edible stage? I tend to throw it out with it has a really strong yeast-like/alcohol odor.

Cat T nope kimchi don't go bad but the longer you keep it the more it ferment and sour in taste. It is hard for kimchi to go bad unless you keep it the wrong way. You have to keep the kimchi under it's juices and don't let it expose above the kimchi juice as this will make it bad and turn into bitter in taste. What I do is put a plastic cling wrap on top of the kimchi then press it down so it submerged in the juices before closing the air tight container.

kimchi rarely goes bad but it can have fungus when it gets into contact with saliva/other foods or when it's exposed to oxygen for too long:) The fungus isn't bad for you. You can remove the part with fungus and the rest of the kimchi should be fine to enjoy.

depends the kimchi you buy. traditionally it is supposed to be a bit spicy but if you buy at a western store they usually make it less spicy

In addition to what Camille B stated, there are some varieties of kimchi that that aren't spicy at all (the chilies that are commonly associated with it are a new world crop after all, and prior to it's introduction into Korean culinary culture kimchi would have been made without it).
