Chocolate Taiwanese Castella Cake Recipe
Cake flour 70 g.
Corn starch 10 g.
Cocoa powder 15 g.
Warm vegetable oil 60 g.
Fresh milk 60 g.
6 egg yolks, (L size)
salt 1/4 tsp.
vanilla flavor 1 tsp.
6 egg whites (L size)
Sugar 95 g.
Lemon juice 1 tsp.
Bake at the top and bottom (with hot water) 140 degrees for 40 minutes + 110 degrees 30 minutes + 10 minutes (remove the water tray)
