First of all, I'd like to say this is an amazing recipe and you really did a great job of showing two different kolaches: one sweet and one savory 😊 I know your husband freshly milled the flour. I read/ heard/ seen videos from expert chefs who make breads and pastries that you never should use freshly milled flour. You should wait one week. That way the flour could properly hydrate when you're mixing it, because if it's newly milled it will not absorb the moisture and be as light and it will remain sticky and would not develop gluten as well as a matured ,( bloomed) flour.

Thank you for watching! I like to use the freshest fresh milled flour, that way I still get all the nutritional benefits including the Vitamin E that starts to oxidize as soon as it is milled. My whole channel and blog is all about how to improve baked goods using freshly milled flour. I have found many methods, and tricks that I share all throughout my videos, and blog. It is new and original to me and I have been sharing this info with others through my own trial and error journey. I agree that most the other fresh milled flour recipes are denser, and sticky, etc if you are looking at all the other info out there. But, I have different methods I have been teaching, and so many people have had wonderful success with it! It is possible to get nice airy squishy bread with freshly milled flour, without sifting. But, the methods and techniques are very different than traditional methods. Thanks so much for watching! Happy Baking!

You can use AP flour, but you may need a bit more flour for it. Also, the kneading time will be shorter, just look for nice stretchy dough. Let me know what you think! Happy Baking!

Yes! Hruska's is amazing! we stop everytime we are traveling through. I love my mill. We played with it for awhile to get used to it. We have had it for about a year. we used to have a steel impact mill, and it just wasn't the mill for us, so we switched to this stone mill, and have been happy with since!

I want to make your Kolaches to take with us camping. Would it work if I froze them before baking and then pulled out and baked when we wanted to eat them?'

You could freeze them, then put them in the fridge the night before to defrost. Then, let them sit on the counter for about 2 hours to come to room temperature and bake as directed. 😊

It's interesting you call what looks like a danish, a kolache. In NE Iowa, where Czech composer Dvorak spent his summers it was populated by so many recent Czech immigrants, we make them differently. The corners of the top are joined so there is a dough cross pattern with only 4 small open areas where you see the filling.

There are different styles of Kolaches, and I love the kind you are talking about too. However, these are not a puff pastry like the Danishes, they are more like a bun or sweet roll dough with the filling.

@GrainsInSmallPlaces I took a bit of a dive into the topic and it seems, best I can tell, that the danish-like style have origins in urban areas and the closed top ones are rural in origin. Poppy seed, prune, and apricot are our traditional fillings, but after years of begging I finally got some strawberry and blueberry ones and they are fantastic!
