A Kolache is a pastry with a sweet filling. A Klobasnek has the a little sausage in it, with maybe some kraut and cheese if your lucky. Gerik's in West and Weikel's in La Grange are my favs.

You're calling the way I've always used it. The Czech bakery in West and the one in Snook are the best I've been to. Klobasnek is what I still call them 50 years later.

There was a place in Houston on Bingle Road called The Kolache Bakery. The owner was a Czech Tex from Halletsville. She had the real kolaches and the others with the sausage and I think it was just easier on her customers to call them sausage kolaches than klobasnek. Man, those were the best kolaches I've ever tasted. The only time I had a similar one was when a lady brought homemade kolaches to the school for teacher appreciation week and it was her grandmother's recipe. It tasted exactly like the ones at the old Kolache Bakery with the bubbles in the bread and just the right amount of whatever flavor made that bread so delicious! I wish the bakery was still around. It was WAY better than the ones in West.

I look at it philosophically - every culture has a way of wrapping dough around fillings, layering dough and something else, and making sharp pointy things. Humans do be making sandwiches, pastry, and knives. If you want to call it a kolache, fine. I spent quite a lot of my adult life in Texas and, yeah. It fits. Sweet kolache are little fruit-filled dough bits. Sausage kolache are sausages stuck through dough. fine. My Czech grandmother made barouks (spelling variable) which were potato dough wrapped around a ground meat and cabbage filling. That's what I had as a small child and something I go back to in memory. Other similar foods would be pretty much any stuffed dumpling, eggrolls, burritos and enchiladas, tamales, ... You could probably make an argument for double-crust pies to fall into the same category of foods, though being able to eat a kolache out of hand narrows things down a bit - there are fewer of those recipes worldwide. Pig-in-a-blanket seems to be British of some sort, but the idea is pretty universal. Call it what you want. HEB's versions are pretty good.

Love kolaches!!! I believe West has the best kolaches, I usually get mine at Czech Stop but Texas Monthly picked Village Bakery as the best. And while HEB does sell that sausage thing as a "kolache" even those packages in smaller letters say it is really a klobasnek.

It's a Kolache. The HEB frozen kolaches are delicious. Czech Stop has the best sweet kolaches. Naegelin's German Bakery has the best savory kolaches.
