KOTHIMBIR VADI
Preparation time 10-15 minutes
Cooking time 20-25 minutes
Serve 2-4
Ingredients
For Steamed Kothimbir Vadi (Home Style)
2 cups Gram flour, बेसन
¼ cup Rice flour, चावल का आटा
Salt to taste, नमक स्वादअनुसार
1 tsp Sugar, चीनी
2 tsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
½ tsp Turmeric powder, हल्दी पाउडर
½ tsp Degi red chili powder, देगी लाल मिर्च पाउडर
¼ tsp Garam masala (optional) गरम मसाला
A pinch of asafoetida (optional) हींग
½ tsp Black peppercorns, crushed (optional) कुटी काली मिर्च
¼ cup Curd, beaten, दही
⅓ cup Water, पानी
1 tsp white Sesame seeds, सफेद तिल
1 cup Coriander leaves, chopped, धनिया पत्ता
1 ½ tsp Oil, तेल
For Cooked Kothimbir Vadi
2 cups Gram flour, बेसन
¼ cup Rice flour, चावल का आटा
Salt to taste, नमक स्वादअनुसार
2 tsp Sugar, चीनी
2 tsp Ginger Garlic paste, अदरक लहसुन का पेस्ट
½ tsp Turmeric powder, हल्दी पाउडर
1 tsp Degi red chili powder, देगी लाल मिर्च पाउडर
½ tsp Garam masala (optional) गरम मसाला
A pinch of asafoetida (optional) हींग
½ tsp Black peppercorns, crushed (optional) कुटी काली मिर्च
¼ cup Curd, beaten, दही
4 ½ cups Water, पानी
2-3 tsp Oil, तेल
1 cup Coriander leaves, chopped, धनिया पत्ता
1 tsp white Sesame seeds, सफेद तिल
½ tsp Black peppercorns, crushed (optional) कुटी काली मिर्च
2 no. Green chili (less spicy & finely chopped) हरी मिर्च
For Chutney
⅓ cup Tender Coriander stems, धनिया के डंठल
1 tsp Sugar, चीनी
Salt to taste, नमक स्वादअनुसार
½ inch Ginger (peeled & roughly chopped) अदरक
2 no. Garlic cloves, लहसुन
2-3 no. Green chillies (less spicy & broken into half) हरी मिर्च
2-3 tsp Oil, तेल
1 medium raw Mango (peeled & roughly chopped) कैरी
¼ cup fresh Coconut, roughly chopped, (optional) नारियल
For Tempering
1 tbsp Oil, तेल
½ tsp Sesame seeds, सफेद तिल
½ tsp small Mustard seeds, सरसों के बीज
2 sprig Curry leaves, करी पत्ते
Other Ingredients
Oil for greasing, तेल
white Sesame seeds, सफेद तिल
Oil for shallow fry, तेल तलने के लिए
For Garnish
Prepared Tempering, तैयार किया हुआ तड़का
Coriander sprig, धनिया पत्ता
Process
For Steamed Kothimbir Vadi (Home Style)
In a bowl, add gram flour, rice flour, salt to taste, sugar, ginger garlic paste, turmeric powder, degi red chili powder, garam masala, asafoetida, curd, water, white sesame seeds, coriander leaves and make a semi soft dough.
Add oil and mix it well. Keep it aside to rest for 8-10 minutes.
Take a dish or plate and grease it with oil.
Apply water on the palms, transfer it to a tray and spread it evenly.
Sprinkle some sesame seeds and transfer it to a steamer, cover it with the lid and cook it for 15-20 minutes on medium flame.
Keep it aside to cool down at room temperature. Demold the kothimbir vadi and cut it into pieces.
Heat oil in a kadai, add kothimbir vadi and fry until golden brown.
Transfer it to a serving dish and finish it with prepared tadka.
Garnish it with coriander sprig and serve with prepared chutney.
For Cooked Kothimbir Vadi
In a bowl, add gram flour, rice flour, salt to taste, sugar, ginger garlic paste, turmeric powder, degi red chili powder, garam masala, asafoetida, crushed black peppercorns, curd, water and make a lumps free batter. Add oil and mix it well.
In a kadai, add the mixture and cook it until it thickens on medium flame.
Add coriander leaves, white sesame seeds, crushed black peppercorns and cook it for 4-5 minutes until it leaves the edges.
Add green chillies and mix it well. Transfer it to a greased tray and spread it evenly.
Transfer the tray into the refrigerator and let it set aside for a while.
Demold the kothimbir vadi and cut it into pieces.
In a kadai, heat oil, add kothimbir vadi and shallow fry until golden brown.
Transfer it to a serving dish and finish it with prepared tadka.
Garnish it with coriander sprig and serve it with prepared chutney.
For Chutney
In a mixer grinder jar, add tender coriander stems, sugar, ginger, garlic, green chillies, oil, raw mango, fresh coconut and grind it into a smooth paste.
Keep it aside for further use.

One of my favourite evening snacks in Mumbai, apart from Vada Pav, Khandvi and White dhokla (idada). Used to regularly order from Surti's in Dadar to my office in Lower Parel. The key is in the proportion of the Batter / dough otherwise it becomes hard. Very nicely explained ❤

So fascinating! I’ve never seen the method 2 of cooking the batter like a zunka then frying it. There’s another method that I use - I first make a dhokla-like batter then steam it in a cake tin, covered with a lid. Could also bake it in an OTG. Essentially, I get a dhokla-like sponge and then shallow fry it in oil at low heat. It’s interesting to note there are so many ways to make this otherwise simple dish! PS. It’s my favourite Maharashtrian snack, and I 100% relate to the excitement of sniffing fresh kothimbir 💚

रणवीर सर तुमच्या तोंडून मराठी शब्द खूप छान वाटतात कृपया करून पुढच्या रेसिपी मध्ये आपण अधिक मराठी शब्द वापरावे अशी आमची इच्छा आहे कारण तुम्ही जेव्हा एखादी रेसिपी मध्ये मराठी शब्द वापरून बनवता तर आम्हाला असं वाटतं की तुम्ही आपल्या खूप जवळचे मातीतली माणसं आहेत त्यामुळे तुमची आणि आमची एकत्र असणारे माणुसकी तुम्ही जपता त्याबद्दल तुमचा खूप आभारी आहे आणि तुमच्या रेसिपी खूपच छान असतात आणि सोप्या पद्धती मधल्या असतात तुमचा मी खूप खूप आभारी आहे तुम्ही ही रेसिपी दाखवल्याबद्दल मी एक मुंबईकर मराठी माणूस

Good evening sir 🙏 .I am your regular viewer . Very nice & easy simple method shown by you ,sir. I am from Nagpur , Maharashtra. The 1st type of Kothimbir ( कोथिंबीर)वडी is prepared in some parts of Maharastra....particularly Marathwada side. The second recipe ..we call it as ' Patodi '( पाटो डी), which is enriched with a spicy curry . Kothimbhir vadi which we prepare is lot of कोथिंबीर+grated coconut + चारोळी ( nut)+lot of poppy seeds +cashew & raisins optional & ofcourse with all masala like chilli powder, salt etc. This is stuffed in a dough made of besan + () ,steamed and then fried or directly fried ... Generally served with kadhi or dahi. कुछ भी हो , video dekh k मुंह मे पानी आ गया. Surely I shall try with your 1st (first) recipe.😊🙏

One can use a pressure cooker as well, for steaming. The easiest way to steam kothimbir vadi, alu wadi etc. Same way I make methi vadi as well without dahi. Tastes delicious when deep fried. And best wishes for your anniversary 🎉🎉❤

Hi ranveer, u r a wizard in kitchen, and i love the way u narrate ur cooking story, have watched all ur blogs and was fasinated the way you make cooking look so awesome and easy. One request i just want to make in this fine flatform. You have cooked all most all types of dishes around india from maharastrian to bengali, malwani to punjabi, chinese to korean and the count will go on. Just i have a request plz cook and upload an Odia dish which will be an unique dish in ur blog as well as as u can cover another part of india. Hope you will look into my request with a humble heart. And thank you for inducing mordern cooking in homes. Appriciate all your efforts you deal in making a video.

Nice recipe…This video has reminded me of mom’s beans ki sabji bcoz she cooks besan sabji in a similar way to that of cooking method of urs but obviously with less of masalas and coriander.will defn try this recipe too.thanks 🌟
