For the Chicken
2 boneless/skinless chicken breast, cut into 1/2-inch cubes
1 tsp. dark soy sauce amzn.to/1RTHGR3
1 Tbs. shaoxing wine or dry sherry amzn.to/1QxFmki
2 tsp. baking soda
2 tsp. cornstarch
1/2 tsp. white pepper
For the Sauce
1/2 tsp. dark soy sauce amzn.to/1RTHGR3
3 Tbs. light soy sauce
2 Tbs. black vinegar amzn.to/1RTJGsq
2 Tbs. sugar
1 tsp. cornstarch
1 Tbs. shaoxing wine or dry sherry amzn.to/1QxFmki
1/2 cup chicken stock
For Stir Fry
2 Tbs. cooking oil, divided
4 to 6 cloves garlic, chopped (approximately 2 Tbs.)
1 oz. ginger root, chopped (approximately 2 Tbs.)
10 dried chili, cut into 1/2-inch pieces (approximately 3 Tbs.) amzn.to/1nTOoPn
1 Tbs. Sichuan peppercorns, toasted and lightly grind amzn.to/22oRw8l
4 to 6 green onions, cut into 1/2-inch pieces (approximately 2/3 cup)
1/4 cup roasted/unsalted peanuts (substitute to cashew, almond or you can omit)
1 tsp. sesame oil (optional)

I have made this recipe with shrimp and another time with beef because it was what I had on hand and it came out delicious. Can't wait to try with chicken. Of all the kung pao chicken recipes I've seen on KZbin this one seems to be the best one and most restaurant quality. Everyone I've made it for has loved it. Thank you Seonkyoung love your videos.

The first time I had Kung Pao Chicken was when I was in college in Memphis TN (decades ago!) in a small restaurant called "Hing Wah". They added celery and carrots I assume to make the dish bulky so it cost less to make. I never saw any other restaurant do this, but I actually liked it since the vegetable additions made it less spicy overall which is fine by me! I like some spice, but not too hot! Your recipe videos are so well made and easy to follow or adapt to anyone's preferences. Great work as always. Thank you.

Excellent!!! Made this int a Wok I got for my birthday from my kids. Have made several dishes so far and this by far was the best. If you have all the exact ingredients, improvise. I substitued white wine vinegar, hoisin sauce and just regular soy saucee . I do recommed usig fresh garlic and fresh ginger though. You can definetly taste the difference. Will be making this again for sure. Hope to find some of the authentic ingredients to take it to the next level. TY!!!!

Hi Chef Seonkyoung. It's the first time i see you and husband eating with the spoon, it's unusual in Asian Kitchen. So far, i made few of your recipes and i still don't believe it's me who did it. It taste like in the restaurant, of course it's much cleaner with best and fresh ingredients. Oh my Gosh! i can't stop cooking Asian food now it's addicting, but it's so convenient, cause i don't trust food in restaurant at this time of crisis. Thanks to you again, i'm improving . Brilliant! Just cooked and eaten this and perfect first time. My dried red chillies are extra hot so just used two and added some chopped red pepper (capsicum) for colour and texture. Delicious

I. Made this last. Night, I subbed in egg whites for the baking soda. This was F*****G delicious. The crunchy Szechuan peppercorns are amaze balls. Make this, don’t skip anything. I made it with leeks instead of onions. this is going in regular rotation

My husband and I love spicy foods.. we cook a lot and compared to most people around us we can handle very spicy food. I make this recipe often (with some modifications to make it low carb) and let me tell you... 3 tbsp chili and 1 tbsp Sichuan peppercorns is absolutely insane. 1 tsp of each is plenty hot and numbing. I have tried with half of what the recipe said and we both got sick, my husband even vomited later. Also, 1/2 cup chicken broth is way too much, I prefer to us 1/2 tsp of chicken base instead of having to cook down all that water at the end. Even though I had to change those few things it's still an awesome recipe, Thank you!!

I made this last night using the written recipe from her website and it is HOT!! And I am not weenie when it comes to spicy food either. Just a warning that if you are not ready for intense heat, lay off a bit on the peppercorns and consider de-seeding the chiles first.

Kung pao chicken is my favorite! I'm from myanmar! This is a staple Chinese dish in every Chinese restaurants in here! I love the phrase 'Don't waste the chicken!' Then he get the chicken off the floor and eat back!

Thank you for sharing. Somewhat new to channel, but this recipe looks more "authentic" to the Kung Pao that I've had in American restaurants. Lot of these people who claim to know how to make KPS or KPC don't really know what it tastes like. Yours looks like I got it at my local Chinese restaurant, but not lot of them left as the Pandemic has put many out of business in Houston, Texas.

I just made this. I can't say enough good things, this is soooooo good! I'm fortunate to live close to an Asian market so I was able to get everything I needed. If this is an option for you, the ingredients are not expensive, and I recommend sticking exactly to the recipe. I think I spent $25 on all the sauces and spices, and there's plenty to last for many more batches. I stuck with 10 peppers and it was perfectly spicy for me (jalapeno heat is comfortable for me. If you're into habanero heat or more you'll want to use more peppers). I use a porcelain dutch oven instead of a wok for stir fry and it works beautifully, and there is so much you can do with that one dish. Seriously, I can't believe this came out of my kitchen! It's right up there with what you'd get at a really good restaurant. I'm going to portion this out and put it in the freezer for meal prep, my lunches are going to be awesome!

I didn't weigh it out, I just used two breasts per her recipe. I don't think it's necessary to be so precise with the meat as it is with the sauce; the sauce is what carries the signature flavor, so definitely stick to the proportions there. Just use what you would consider to be average-sized chicken breasts and it'll turn out fine.

so the ad that came on for this video was a knorr packet food commercial where they take packaged food, add a couple of fresh ingredients and purport to call that real food (by the way it was some kind of wet, sauce-y pasta dish called "brushetta chicken, and yes, the mis-spelling on bruschetta is on purpose since that's how they pronounced it - i still can't find the bruschetta in there). Cooking real from from scratch is NOT hard, as Seonkyoung shows us. Get with it, the rest of America! I cook a lot of Japanese and Korean food but not so much Chinese, so this was really helpful. I am so hungry right now!

Ok first, I got to say “awesome recipe” the flavors were so good. I only used half of the pepper corns and only 7chili’s and after half hour and a half gallon of milk my face has finally got some feeling back, I’m still a little dizzy , next time I’ll only use half of what I did use. A couple of nights ago I made your gen. TSO’s chicken and my wife thought it was too spicy god if I let her try this I’ll be divorced. Love your recipes

bravo for including the special peppercorn. Most videos about Kung Pao Chicken don't even know about this ingredient. Most Chinese restaurants I go to in the Bay Area don't even do this dish correctly.

Made this last night. OMG! SO GOOD! Never made Kung Pao before. However, you said 10-20 chilis .... ummm, I really like spicy things, but I don't come close to you!! I used 6 dried chilis cut in half. WOW!, Mouth on fire, but not bad "fire". LOL. Anyway, texted a photo to my Daughter of finished product ... immediately texted back, in all caps ... "SAVE ME SOME PLEASE". LOL. Love your videos!!!! :^D

You're recipe looks a lot less oily than the usual dish you get at the restaurants and looks even more delicious! I need to try it out.

I have to say you know a lot more about this dish than some of the Chinese food youtuber lol. Well done. My only concern is whether the dish would be too salty or not...those soy sauce and dark soy sauce meant business.
