I made the taco bowls and I made these, too. Soooo yum. It made 7cookies for me. I made both creams. Both are so delish. I took 2 of the cookies and melted some of a Lilly’s chocolate bar and spread it on the cookies and then let it harden on them. Very good that way, also-without or with the filling. 😋 I wish I could put a pic on here for everyone!

I'm sensitive to Erythritol, so I just made the chaffles themselves with a some liquid stevia. They were really good. the first time, I forgot the cheese and it was still good.

Those are so yummy! When I get my mini waffle maker, that's what I'll be making. I love Oreos, too. I'm going to do a red velvet version, and add some cream cheese to the filling. I'm in Winnipeg and we have a bulk barn that sells it they have black,red ,and regular cocoas.if you have a scoop and save type of a store you can find it there .the black cocoa is actually what they use in the Oreo cookies .the colour and taste of just a little in you're chaffles will make all the difference you'll see when you're able to get it

I’m so glad this helped! We do have a few other chaffle recipes that we’ve posted if you’re interested. No zucchini spaghetti recipes, but, I did find a bag of frozen zucchini noodle “nests” at Costco. We made them according to the package instructions, then added them to warmed up Rao’s Marinara sauce and some cooked ground beef. It turned out really good!

Here’s a tip I use when I need soften butter, take your for sided grater and grate the cube of butter on the side with the largest holes. Let butter set for a few min. Until it’s soft enough to use, works great for me

Hi Gayle, that's an immersion blender that I used, but ours has a whisk attachment. I haven't tried it with the blender part, so I can't say for sure how that would turn out, but if you have a hand mixer, that would be just fine. I would recommend starting out slow so you don't have powdered "sugar" flying everywhere. Or start mixing it by hand first, then when everything is somewhat incorporated, use the mixer.

I haven’t been able to find any monkfruit that’s in a granulated form unless it’s mixed with erythritol (like the Lakanto we use). By itself, I’ve only seen it in liquid form. If that’s what you’re asking about, I think you definitely could, but it may pose an issue when it comes to the consistency of the batter, or the cream.

Is your cream the consistency of a butter cream frosting or was it stiffer, more like the center of an Oreo?

Sherri Cary definitely more of a butter cream when I first made it. But after storing it in the fridge, it gets a lot more stiff. I think if you were to let it warm up for maybe 15-20 minutes on the counter, then put it in a bag to pipe it out, it would be really close to the Oreo Creme.

Thank you! I have used mozzarella in most of the other chaffle recipes that I've created. Personally for me, in this one, it just doesn't give it the flavor that I want, and it makes it.....harder....which I guess is good for an Oreo type cookie. But I wanted the Oreo-ish flavor with softness. 😉

Made this today with leftover chocolate icing. My hubby loved it, although it was too much chocolate for me. I added some low carb maple syrup to make it sweeter. I just made them. There is no way I could use that sweetener. Phew. I used swerve, I'm not sure if that is different. I only used 1 cup and it was so sweet. I had to add extra butter and cream cheese to even out the sweetness. Then it seemed like the Chaffle needed more sweetness. Lol but it's good! Ty again.

Sherri Lynn we use the lakanto because it’s a 1:1 substitute for “sugar” and we like it better. It’s a mix of erythritol and monk fruit. I could be wrong, but I believe Swerve is only erythritol but could be sweeter as I believe it’s a smaller blend. we’ve tested it in many recipes before but found we could get the lakanto cheaper! Glad you liked it!

For my ingredients, one chaffle (if you get five out of the batch), and 2 Tbsp of cream, I get these approximates: Chaffle by itself: 1.8 Net 1 Chaffle with 2 Tbsp regular cream filling: also 1.8 Net (this is estimating about 40 - 2 Tbsp servings of what I made) 1 Chaffle with 2 Tbsp Peanut butter cream filling: 1.9 Net (again, estimating about 40 - 2 Tbsp servings of what I made) Hope that helps!! - Stacy

Haven’t had a chance to put these particular ones in the fridge yet, but any other chaffles we’ve refrigerated have been good up to a week. We use a toaster oven or the waffle irons to heat them back up. They can be heated in a toaster as well!

If you’re not allergic I would give it a try, I dislike coconut and enjoy it. You can replace the coconut with almond flour using the standard conversion rate of 4 to 1 but we haven’t tested it as the liquids also matter.

I’ve seen you use that Chihuahua cheese in other videos and I am wondering if you use that in place of mozzarella when making chaffles? In the mix and sprinkled on the waffle maker before the batter and then again on top of the batter? Thanks! I love all your recipes. I’m fixing to try this one! But I bought the Chihuahua cheese. You think that will be ok in this recipe? I just don’t know the difference in mozzarella and Chihuahua cheese.

The chihuahua cheese is mills like the mozzarella, but I don’t know how it would do in a sweet chaffle. Not a bad idea to try....I usually use the chihuahua when I’m making savory, and stick to mozzarella or cream cheese for the sweet. I think I might give it a try next time I make my chocolate chip cookie chaffle just to see how it turns out...

You can, but the ratio is different - 1/4 cup of coconut flour equals 1 cup of almond flour. I haven't tried it with almond flour, so I can't speak to how many chaffles that would create, but I definitely encourage you to try it! I like to go with coconut flour because I don't have to use as much, which makes the chaffles lower in net carbs. 😀

I actually have a chaffle recipe that I made by accident that I was told tasted like a cinnamon roll. I don't know if it was quite up to Cinnabon standards, but I wonder if I could get close. Keep an eye out for a video in the future. In the meantime, I want to say that cinnamon, vanilla, and cream cheese are your friends. We’ve found that they store quite well in the fridge. The longest they’ve lasted is a week (because we eat them all), and we haven’t had any issues reheating them. Just wouldn’t recommend the microwave as we’ve noticed they can get a little rubbery.

I'm just starting out with the keto thing, and kind of overwhelmed by all the differnt sweeteners. I'm wondering if, since it's a few years later, if you've found a good one that wouldn't be 'gritty'?

No, unfortunately...we haven't branched out much because we do like the Lakanto brand. Xyletol is supposed to be good but we don't buy it because it's the one alternative sweetener that's deadly to dogs. I'd love to try it, but we just don't want to take the chance that something might drop on the floor and a dog would get to it before us. The grittiness is not pleasant, but we've learned to accept it.

Hi Patricia, I use Lankanto erythritol, which is sweetened with monkfruit. You can try using a liquid monkfruit sweetener, but I'm not sure how that would change the consistency of the mix.

I use Lakanto and prefer that because it is sweetened with erythritol, which, I feel makes it have less of a "cooling" effect on my baked goods. Some people have a real sensitivity to that, and others love it. I don't notice it much myself anymore, but it was weird at first. I like Lakanto better than Swerve because Swerve doesn't use any monkfruit sweetener, and I notice a huge difference with the cooling effect between the two brands. However, I think it's more of a trail & error personal preference. I know some people like Swerve over Lakanto. It's all up to what tastes best to you.

Macros are going to vary depending on the ingredients you use and how much cream you use. But for what I used (and these are approximate), I have, per chaffle - 110 cal, 6.9g fat, 3.6 total carbs, 1.8g fiber, 1.8 net carbs, and 6.1g protein. one chaffle w/2 Tbsp of regular cream - 123.7 cal, 8.3g fat, 3.6 total carbs, 1.9g fiber, 1.8 net carbs, 6.1g protein one chaffle w/2 Tbsp of pb cream - 126.7 cal, 8.4g fat, 3.8 total carbs, 2g fiber, 1.8 net carbs, 6.5g protein

This one might be a little more difficult, but I would say definitely try it! Make it up as the regular sweet cream first, and add a little bit at a time, maybe a Tablespoon to start, and see how that tastes. If you try it, I'd love to know what results you come up with!

No, I used the sugar free PB Fit. I do also have the regular PB Fit, but jumped on the SF kind when I saw it on Amazon. It has sugar alcohol (erythritol and monkfruit extract) in it, but I don’t count those.

So I followed along and hubby (who ate only Oreos for the last 10 years for his sweet tooth) liked the peanut butter cream but said not the chaffle alone. Too bitter he said but I made both creams. I don’t eat sweets much on keto but I tried the peanut butter cream and the Erythitol taste was so overpowering😳I guess that’s why I don’t eat keto sweets much😢😢Thanks for the recipe guys!🥰Did you mean coconut flour?

Thanks for trying it, and thanks for the feedback! One option could be using monk fruit liquid sweetener. I haven’t done that because we’ve been out of it and Lee forgetting to order more. 😕 I also tried using the Bake Believe dark chocolate chips instead of the cocoa powder and cutting back on the erythritol, but it just didn’t work for me.

I don’t notice a taste difference between Swerve and Lakanto. But I like Lakanto better because it’s sweetened with Monk Fruit extract, so I don’t feel the need to use as much. I realize that doesn’t necessarily translate in this video, but when baking cookies and such, I’ve found that I can use less.

Do you have a particular brand you'd recommend? I haven't been able to find monkfruit in a powdered form on its own. The best I've been able to find is Lakanto erythritol which is sweetened with monkfruit.
