Seema ji I appreciate all your tips . I am a kannadiga in Bangalore . Hum log itna tam jhaam nahi karte hai. Ye sab tam Jhaam sirf restaurants me hota hai jo aap log dekhate hai. We don’t follow this process of wiping with cloth etc between dosas. I keep dedicated tawa for paratha and dosa. You should not use it to make phulka. I have following inputs for you 1 authentic dosa is only urad daal , no moong daal but you can add it to increase protein or for variation. 2. For dosa you can soak everything together and also grind everything together . Only for idli you need to grind separately . Tamil people use same batter for idli and dosa but we kannada people don’t hence our dosa batter can be ground together . 3. Soft dosas ke liye mota dosa banana zaroori nahi hai . Make the batter thoda flowy not very thick and cook it second side also . You get soft yet thin dosa . We all at home prefer soft dosas not resturant jaisa crispy . Hope these tips will help you to be better at dosa making .

Give one more tip please.. When we pour batter for second dosa should the gas flame be high or low or medium.. What is exactly good temperature for dosa??

@@indusvalley1720 At home we normally cook dosa on second side also . At that time the gas is kept at sim , temperature of tawa anyway comes down and is just right temp to spread the next dosa without sprinkling water , wiping etc . Sometimes if the tawa becomes very hot we cool down by sprinkling water but never wipe . With practice you manage to maintain the temperature of the tawa . Very similar to when we make phulka ….with practice we need to keep increasing and decreasing the gas flame. In big families when we have more people we keep 2 tawas simultaneously and make ..no time for such elaborate process . Hope it answered your query .

Ek baat samaj nhi aayi aapne kaha urid dal ek baar wash karna hai but usme toh bahut pesticide hota hai aur achhe se wash nhi kiya toh bad smell aati hai .
