You can cut them with a round pastry/cookie/biscuit cutter before they cool! You totally could have salvaged those first three batches and they would have been beautiful. I do this if I’m not making them for a party or to give away. Even if they haven’t spread out into each other, a lot of them come out with funky edges or whatnot, so using a cutter makes them all uniform and with perfectly even edges. I also love to make sandwich cookies out of these, with chocolate in the middle; people FREAK OUT for them❗️
