Between those watermelon radiches 13:45 & the Tuscan/Dinosaur/Lacinato Kale there is so much BRASSICA love in that bowl.

I steam kale almost nightly. It's a bit easier and quicker than bringing a large pot to boil and then fishing out the kale (esp if you have a dedicated vegetable steamer on hand). Flavor/result is similar.

I literally laughed out loud when Eric interjected with the "everybody at home, feel free to smash the like button", and it was made even better with everyone laughing instantly after 😂

Quick comment to say thank you 😊 Eric and Paula your videos are just incredible and I look forward to them every Monday morning here in Queensland Australia as they really set me up for the week. You guys are so inspiring, genuine and funny - it's so awesome. Also, you wouldn't believe just how much your vlogs teach others. I bought a road bike about 3 months after finding your channel (thanks KZbin gods!) while recovering from a broken foot and have only just bought a wahoo kickr as we winter is on its way and I live in a city called Toowoomba which gets quite cold. I've been struggling to get my rear wheel back on without making a right mess of myself and having my bike nearly fall over haha but one minute into your video I've been able to see how to put my rear wheel back on better than I have been doing and have just done it with ease. It's incredible and I just HAD to reach out to say thank you - truly. Also your playlists are awesome! Lots of love from Australia. 🐨🐨🐨🐨

I’m in pain just watching those lactate tests, I can’t imagine doing them! Also, the amount of salt Lindsay put in the water freaked me out. Please tell me that’s a less concentrated type of salt (like kosher or something). Loving the fancy pesto ideas!

You will have to post to show what your VO2 max and ranges are, for us average age groupers! I would be curious how the scientific #s compared to what Garmin or Strava predicted the vo2 max at.

I’ve noticed kale really benefits from aggressive seasoning. The salt in the cheese & pasta water makes all the difference. If anyone is pressed for time just the addition of raw kale in a broth or dissolved bouillon cubes can get us all closer to all that vitamin K magic. Resisting the reflex to comment on caramelizing aeronautics (alliums like garlic, onion, scallions (ramps will be in season SOON)🧄, peppers, celery & carrots (or parsnips)).

That is at least the 3rd race I've seen Emma succumb to the heat. Wonder if it's physical or hydration and or if any similarities to Sarah True's issues with heat in some of her last races? I know for me so far, running in warmer conditions is horrible!

Training question @Paula & @Eric - if you haven’t done a lactate test for years, why are you doing one now? Are you/your coach influenced by the Norwegians?

Honest question. You guys all ate more than one serving of that pasta, right? There couldn’t have been leftovers, right? 3 endurance athletes could easily crush a box of pasta, even with the salad and sides, right?

So hear are my thoughts on vo2 max, exercise is stress on the body, breathing is a reaction to stress, sure you can practice breathing hard to achieve speed, but vo2 max will limit you, now I like to go fast!!! Real fast, like beat roadies on my mountain bike, on the road, up a hill with big tires, and a bike that ways 46 pounds, and twice as old as them, and I fast do eat anything, hmmm, and they all wonder what happened, why they lost, this is why, they think they should win big, but as the ride proceeds, they start to breath hard, I start to hold my breath, and very quickly i have way more power then them, why where does their power go, I believe it goes into heart beat, and lungs, and no blood can even make it to legs, and then legs feel thick, and its like they self destruct, so my advise, dont follow others, and be special, different, and learn to harness good energy, not bad energy, like when I ride, I always pretend either I am surfing big waves, and must be able to hold my breath, at any time, or,,,racing in Alaska, were bears chase you, and I will never beat a bear, i just always need to have breath so I can out sprint, the others, and not be eaten by the bear, but I truly believe most are training all wrong,,,like learning to breath hard, while I am like learning to breath relaxed, and to prove breath is a reaction, just jump in super cold water, and what happpens, you gasp for air,,,

And it did look super good, I would add raw garlic, turmeric, and ginger, chopped, and sprinkled on top, I put those three on everything I eat, its like what the witches used back in the day, lets not talk about the bad that happen to them, lets just show the world how good they all are, and trust me, they are super dumper good, think if you really focus on good, good prevails right into your life

cooked garlic will have a more mellow flavor and lees power than raw garlic ! shame
