for those wondering for a rack lamb from around that size after pan searing it put it in the oven for 8 to 10 mins (if you don't have a thermometer)

What Babish said, "Some people don't like the gamey flavor of lamb." What I, a Welsh man heard, "Some poor unfortunate people cannot handle the sheer deliciousness of lamb." Seriously though, that rack looks delicious and is perfectly cooked. I'm personally a big fan of the shoulder steak, cooked rare, with a simple mint and balsamic sauce which is much better if, like me, you don't like malt. A lamb shank done low and slow is delicious, but one of my favorite recipes for lamb is to take a shoulder roast, stab it a whole bunch of times then insert slices of garlic and sprigs of rosemary into the holes. Then rub the thing down with olive oil and salt and roast as preferred (pink is best). Makes the best spring roast, with some new potatoes and other veg. Also New Zealand lamb is delicious, be kind to our bros down under.

Well yeah i don't like gamey taste in anything really, so i would just not buy lamb if that's the case. I feel like buying it and taking out that flavor is a waste of money

Australians love lamb. It’s usually in the “loin chop” form, though we often have a bit more fat on them. They’re actually really cheap here too and we get them in 12 packs In fact we have entire ad campaigns advertising the meat during the summer Yes I am serious Actually now that I think about it, we advertise produce frequently down here

If people really think lamb is "gamy" they must eat some truly boring food. But I suppose "game" is more often referred to as meat someone doesn't usually eat rather than the actual meaning.

Watched this yesterday and thought the same thing... I think lamb is less meaty in flavour than beef. So tonight I went and bought a couple lamb chops from Aldi fried them in a pan and ... still confused. They’re divine and not gamey at all

Based on an anacedote from a friend's dad, the account of another friend's American friend, and my own, albeit poorly remembered, experience in the US as a child I have come to the conclusion that the vast majority of Americans are raised on utterly tasteless meat compared to meat in NZ. Forget lamb, the flavour of a regular grassfed beef steak from NZ is anaecdotely enough to make them hurl. Not because of poor quality, but rather because the taste is so "gamey" to them relative to the standard fare in the States.

It’s also the same audio sample for both, I think? I’m guessing he scripted it backwards, then swapped out one but not the other. So, he....chopped chop but didn’t stick to his rib...

In Scotland where I live there was actually a campaign to stop us importing New Zealand lamb and exporting our own stuff and to start just eating our own lamb instead 😂

NDFilmNZ same with beef Scotland is the home of real Aberdeen Angus, but we export all of it and import cheaper Australian and Argentinian beef, same thing with Salmon

@@terinamelissa I've spent time in the UK and Europe and the NZ lamb they get over there generally tastes different to what we get on the domestic market in NZ. Not sure of there's an "export market" difference in what gets selected to be sent over, but I didn't really enjoy it whenever I ate it. Local lamb from a decent butcher here, fantastic.

The lamb we buy is grass-fed. It comes direct from the farm, and I process it myself. It is fantastic.

Yesterday, tried pan roasted loin chops with the gremolata/chimichurri and side of rosemary parsnips and carrot. Paired it with a Botanist Gin Martini. All recipes were a smash hit and were explained to perfection. Made for a great night of cooking and celebrating. Thank you.

It was an insult to call that chimichurri. Also I'm pretty sure I can buy dried oregano, red chili flakes, parsley, garlic (even dried garlic or garlic powder), salt, pepper, oil and white vinegar in almost every store of the country so idk where you get the "we can't sell this separately" part other than you buying the pre-mixed stuff that just requires oil and vinegar.

My American wife will only eat the “lollipop lamb”, as it “tastes the least like lamb”. The only good lamb I have had in the states was either cooked by me and forced onto in-laws, or at “ethnic “ restaurants. Special mention to Brazilian BBQ joints, any Greek place, and a pretty fancy South African restaurant in Charlottesville VA we went to one time. They even had violently luminous green mint jelly :) You guys didn’t grow up eating it, so you don’t like it. That’s pretty much all there is to it.

@@elyranch1902 It's obviously a cultural thing. Here in Aus (and NZ), most lamb, especially spring lamb is purely grass fed (and most beef frankly). I actually had no idea until this video that people fed lamb corn or grain for fattening.....

Also, having eaten lamb from NZ and AU whenever I ate lamb growing up in California, because my mom said the best lamb comes from NZ and AU, I have no idea what this gamey flavor is. It's the flavor of lamb. It's freakin delicious. Spoon on some mint sauce or whatever else. I suspect somebody got some money from the US Lamb association.

Exactly. So many things wrong with this video. There's many ways to present a rack of lamb, and the butcher did absolutely nothing wrong by leaving those bits of meat on there! Also if you don't like the taste of lamb, idk why you'd eat lamb? Like if you have to get rid of all the fat, make sure it's fed with corn rather than the natural grass they actually like to eat, and cook to a very specific temperature to dull the flavour enough to actually enjoy it then maybe you just don't like lamb my dude. Why ruin a good cut of meat?

I honestly don't get the whole sentiment that lamb is gamey or somehow bad. Being American, it's nearly impossible to find lamb in most grocery stores where I live, but the one time I did have it I thought it was great. Somewhere between beef and pork in flavor, but milder than either. I'll have to try it again sometime and see if it's as good as I remember.

I find it ironic that, in the comments, the one thing Australians, English, New Zealanders, and Welsh can all agree upon ... Grass raised, and finished, lamb is the best, and to hell with grain fed ... We can disagree in which one tastes the best (personally, mine is Welsh, followed by New Zealand, with Australian and English being about equal), but that is an aside to the bigger picture: grain is aweful for any cattle, sheep, or even pigs ...

Grains today have been bred for easier harvest and processing, and thus are much bigger than the grains that sheep, as an example, would have eaten prior to domestication. Nor would they have eaten them in the quantity that they are fed to them now. It would be like you eating pounds of sugar at meals, not occasionally, but all the time.

I am really thankful that I can fairly easily get my hands on a boneless leg of lamb at my local Sams Club here in Florida. I grew up in Fiji and NZ lamb was the best stuff we could get our hands on. Kebabs made from NZ lamb will knock anyone's socks off ;)

Adding a touch of vinegar to the Gremolata / Chimichurri wins the day. I have been eating lamb chops (shoulder and blade) since my mother weaned me from milk (Middle Eastern). Broil the chops just after an olive oil/garlic seasoning, and enjoy with that herb mix. Your taste buds will thank you. Everyone who said they didn't like lamb loved my lamb chops. Your mileage may vary.

AHHH! Thank you soo much for doing this! I'm Greek, but my Yiayia passed away from cancer (a few years ago) before she taught me how to cook lamb. Recently I tried making a lamb leg roast and it came out good so I've been eyeing the lamb rack ribs!! Wish you did a leg or roast cause would love to see how you did differently, but regardless I was excited to see this video. Tomorrow I'm running to Publix to get them lol

I think a little audio editing snafu: “first up we have the individual LOIN chop” followed by “then we have the smaller and more expensive LOIN chop”... 😬

Hard to get in the US. Rich people like it so it is priced to what they would be willing to pay, which is prohibitively expensive for us commoners. (Most places won't even bother carrying lamb)

A slow roasted whole shoulder or leg is the best form of lamb there is. Braised shank is an extremely close 2nd, IMO. Though shank in a massaman curry, totally orgasmic.

As an Australian it's quite funny that the "loin chops" are considered a premium item (T-bone.). They're considerably cheaper than a lamb cutlet (bone in rib eye) over here. They're also sold with the belly fat still attached, which is absolutely delicious.
