Latif, I just cooked this. I went full gorilla and doubled the volume of meat. It was a rip snorter of cosmic proportions! You have excelled yourself with this one. The fennel works really well. Thank you for the video. I am making lamb kofta tonight, and will use your technique. I like the flattened out kofta idea. I will be using my home made Lebanese baharat for ground spice, which is my personal favorite, as well as putting some fresh chopped mint leaves into the mix. Otherwise everything will be very close to yours. Thanks again for the great videos on wonderful BIR cooking.

I just made these. They are very good and certainly moist. I should have added more salt and green chilli. I used 1 red Thai chili and 1 poblano instead. You forgot to say how much corn flour (corn starch) to add. I guessed and used a good TBSP. They remind me of beef keema. Definitely great wrapped in a warm pita or chapati, etc.

Can you freeze the kebabs? If so, freeze cooked or freeze raw? I'm asking because it would be handy, especially in lockdown to make a load of them and then use when wanted.
