Mallika Joseph is a pioneer in Sri Lankan cooking. She was doing cooking shows on TV many dacades back. When we were small, we loved to hear the way she spoke sinhala with a tamil accent. It was funny for us in a way (since we were kids 😁) but refreshing and soothing. She was so decent and respectiful. We had a huge respect for her. She and few other people (cannot rememeber thier names. Shantha Mayadunne was also one of them but she entered the scene little later than people like MJ) started the entertainment cooking tradition in Sri Lanka. They have much more content than todays youtubers who think they know everything. So glad to see MJ is doing really well and she has not changed a bit too. Watching her again reminds me of my child hood. May good health and happiness follow her always.

As I have been craving for lamprais, had some for dinner today but only made the rice and moju which I ate with fried mullet fish. Both rice and moju were delicious! Will make more items next time now that I know how long it will take. Thank you from sunny Switzerland☀️

Hi thank you for your video, I have heard of Sera but did not know it was lemongrass 😂. I love lumprice, we don’t make the liver dish instead we make a dry fried potato dish. I remember helping make over 100 for a party, we wrapped them in baking paper and then foil. Heated them up and placed into lined eskies which kept them piping hot for 6-7 hours. My mother is an amazing cook who only learnt to cook when we moved to Australia - I got my love of cooking by learning with her. Took us a long time to cook rice instead of rice pudding 😂 we where saved by the rice cooker

Don't we need to sprinkle a few tablespoons of coconut milk before baking it in the oven. I have been taught that way.

I have learned Home science/cookery. Do so much baking/ cooking. Samba is much more tastier and aroma is heavenly when the rice is tempered with lemongrass/ cardamom cloves karapincha, sera cinnamon etc. Bastmati (long grain rice) i is a tasteless rice which is only good for buriyani. It has an ability to hold it's shape once it is boiled without breaking the grain. Any curry would taste devine with samba rice. As I commented above we have been taught to make lumprais differently. We serve all the curries and rice on the banana leaf( as Mrs. M. Joseph illustrated). Then a few tablespoons of coconut milk is sprinkled over the parcel. Fold and bake in the oven. That way you get the intense taste of the banana leaf mixed in the curries n rice. I use chicken curry, brinjal and plantain cooked together, fish cutlet, cashew peas curry, prawn sambol, boiled/fried egg, seeni sambol.
