This chili garlic roasted asparagus features tender, juicy asparagus topped with fried garlic and Lao Gan Ma spicy chili crisp. If I'm honest, I usually eyeball all the ingredients when I'm making this for dinner.

NOTES ON ASPARAGUS SOUP: I got the idea to make asparagus soup with the discarded ends from my friend Garrett McCord. I saved the stems from 3 bunches of asparagus, which amounted to about 1 pound total. Then, I made the soup and used this recipe by Elise Bauer for inspiration (www.simplyrecipes.com/recipes.... To flavor the soup, I used onions, a ton of ginger, garlic, and fresh lemongrass. I fish out the lemongrass stalks before pureeing the soup in a blender. I didn't bother adding cream or vermouth, like Elise used. I strained the soup through a double-mesh strainer because there were quite a bit of stringy bits in there.
