How to make chili oil Mix together: 3 cloves fresh garlic, minced 1 tbsp fresh ginger,minced 1 1/2 tsp chili flakes 1 tsp Kosher salt 2 tbsp Gochugaru (Korean red pepper flakes) Heat 1/3 cup vegetable oil to 325°F Carefully pour the hot oil over the spice mixture Make sure to use a bowl that won't crack in the heat-ceramic or stainless steel. Use chili oil within one week. Use chili oil to flavour things like noodles, dumplings, salads.

Looks good, but saute a little finely minced shallot or onion too. At the end, add a lttle red pepper flakes to make the flavor really shine. Edit: I forgot two things. You can add freshly cooked bacon bits for a bit of crunch and umami and you also add a squeeze of lemon juice over the top right before you serve them. It's delicious that way.

When I see nearly deep-fried recipes like your Mom’s I always wonder what you do with the used oil. You can’t flush it, can’t throw it in the garbage, can’t give it away, can’t just make it disappear from the planet. What do you do?

I actually just use the oil to cook. That's what my mom and grandmother have always done. Store it in the fridge, and just use it like plain oil.
