I'm on an extremely strict budget. I.E. making $5 of gas stretch in the car. Making these burritos by purchasing the tortilla shells from the dollar tree and .98 cent eggs from another store along with generic cheese on sale for $1.29 with some cooked onions goes a long way. For less than $4. I can make 12 breakfast burritos. Big time money safer here for folks on a budget and for big families. Thanks!

I love how your kids participate in the meal prepping. It's inspired me to get my kids in the kitchen as well. This is one thing I do on a regular basis. My teen boys decided they didn't want breakfast anymore. Breakfast burritos is the only thing quick they'll eat.

Just a quick suggestion this from a woman who has rolled thousands of breakfast burritos. Take and cut parchment paper or freezer wrap into squares about four inches bigger then your toritillas . Put toritlilla down on paper put your filling in start to roll burritos grab corner of your paper give a quarter of turn fold in opposite corners then roll away then put some tape on it.Much cheaper then baggies and elimanates one step. I can do about two hundred and of these. Hope this helps

I have to say it’s real nice to see you actually being a mom and cooking for your family. In so many large families they make the kids do all the work. And while I have no problem with kids helping out and having chores and responsibilities, they also need a chance to be normal kids, not caretakers to their other dozen or so siblings. I think it’s great you have them help in the kitchen, but don’t leave it solely up to them.

Oh em gee! Several brilliant things: 1. putting hot eggs on top of the cheese to melt it 2. using cookie sheets--I've been wrapping them as I go, which takes oh so much longer 3. I never thought to use that large of a pan to cook the eggs--dunno why, but I always thought to use a skillet 4. Cooking the meats ahead of time Total Genius! Will sub & like!!

Im 47 and raised my kids n now i entertain my grandbabies but i wished i could have done all the things you do.I was stuck working all the time n if it wasnt for fast food and a crock pot we would have starved not counting my low down alcoholic ex husband who done nothing but spend my money.but thats okay but I would have loved to have taught my daughter how to cook.She went to college n now has a great job but she ask why didnt i do this or that.She has no idea on my struggles but i watched ur daughter help you and i thought that was awesome and one day they will do that for there own families.Just wonderful watching this.

We used to make breakfast for a large group. We got a large commercial food grade bucket. 3 gallon I think. We would crack the eggs into it. And not carefully at all. The first year I helped I was sure shells would get in the eggs. But they assured me that shells dont float. So we cracked them in recklessly. Salt, pepper, wisked. Then poured all in the waiting pans except for the last 1/4 to 1/2 cup. And sure enough. There sat the shells in the bottom and that was tossed out. Not a shell in any of the scramble! I was amazed and never would have believed it if I didn't see it for myself! Try it. It really works. And saves so much time.

@@amymaryon I am over 50 and have not ever heard it from any other place since. But when I saw how many you were cracking. Then you mentioned picking shells. I had to tell you. But we didnt use a sloped bowl. The food grade bucket had straight sides. That may matter. The shells may drop down easier if the sides are straight up and down. We cracked a lot. Probably about 3 times your first batch.

I love how your eggs are so white in America. As an Australian, it is completely bizarre to see white eggs! They always remind me of my Toy's r Us Grocery Toys i used to play with. We have brown eggs here, im sure they taste exactly the same but the white ones look like they've been made in a factory! When you crack our eggs too you'll find our yolks are very orange not yellow.

Yes the wonderfulness of bleached eggs?!?!? When we had to stop doing chickens I was disappointed and it was a big change from nice hearty orange to the white almost greenish color?!?!?

You are better off with your orange yolks. The darker yolks are a sign that the chickens are eating more naturally which is better nutritionally. Amy, who is doing an incredible job, she is really amazing, is buying factory farmed eggs which are different than what it sounds like you have. This is also what she is saying in her comment below as well. Its hard to have enough chickens at home for the number of eggs she needs, I would imagine though. Its just a different variety that have white egg shells though. We buy eggs that happen to be brown and our yolks are a orangey-yellow color but they are considerably more expensive. Take care.

Actually the brown eggs are a little more tasty than the white. Growing up we had hens. Some lay white eggs and others lay brown eggs. Depending on what type of hens you have.

@amymaryon I have been binge watching your videos over the last few days (when I have a few mins to spare, here and there) and my question for you on this video is.. Do you put the pans of burritos in the freezer on the cookie sheets until they freeze and then wrap them individually? And what do you wrap them in? I so want to make these for my older boys but not sure how to finish up the prep so when they are hungry, they can grab one or two and pop them in the micro. Does that make sense? Freeze on sheets and place in bags and put in freezer. I just pull out the bag and set it in the refrigerator for days . They don't stick

Just check store prices and give it a try and tweak it each time for better results. You just do enough for your family and triple or quadruple and so on. Make the burritos the way your family likes them. I enjoy queso and salsa in mine!

If you mix in all the fixings and it still seems wet. I would sprinkle a few instant Idaho potato flakes. It cant hurt. It does seem like eggs release their moisture after cooking. Also shop around and make sure you are using a high quality tortilla. The quality varies greatly. Look for the market where the hispanic people in your area shop. They have brands the chain grocers don't have. Tortillas are regional. I make a special trip to our hispanic grocer. Just for the tortillas. A good tortilla will puff up when warming it in a skillet by itself. And there should have spots on it from being cooked. Almost like it was cooked over an open flame.

Good job with making all those burritos. One thought some of them seemed to be very loosely wrapped up and will fall apart . Great job with getting the kids invloved . Would love to see the more grown up version of them. As you siad the kids like them cheesy and no potatoes. Xxxx

I love this! I must have missed this one! There was something very gratifying about watching 5 dozen eggs cook to a scramble. I guess because I have never seen that many scrambled? I dunno. 4:25 How do you prepare the bacon? Do you cook it beforehand and then chop it up into pieces? And the ground sausage, do you season it with something or is it straight off the packaging? Also mind telling me the brand of bacon and ground beef? I might actually try doing this for my family, I feel we've been eating too much processed food recently and it's pretty unhealthy. Thanks!

Bake in oven and then use food processor to chop. I get regular breakfast sausage from aldis. The bacon I get from our discount store hmm not rememberin name

I've been wating to the breakfast Burritos but its just me and my husband and my brother and sister stay the night every once in a while and I just dont know where to start or how many to make for just a small batch how many eggs for just 20 burrito and how much of sausage cheese peppers

If you salt your eggs at the last minute instead of in the beginning they won't cook down as much bc adding the salt during the cooking process changes the chemical composition of the egg and makes them less fluffy. I learned it from Gordon Ramsay lol. You are super mom!

In a plastic bag after frozen. Bring them out the night before. Wrap in parchment paper and microwave for 1.30

Or bake them in oven at 350° for 6-8 min on wire cookie cooling rack over 1/4 inch water on cookie sheet pan [steeming] alternatively you can use toothpicks to hold them closed and heat them slowly in shallow pan on stovetop turning regularly for 3-5 minutes. Enjoy!

I'm not sure how this is freezer cooking. Do you freeze them on those big trays? Did you put them on trays to cook them again before freezing? how do you defrost them to eat?

Freeze and then place in bags. Take a bag out the day before and heat individual ones as needed
