Pro tip for the tortillas - when you’re done cooking them, wrap them in a towel. This will keep them from drying out/flaking and keep them as pliable as ever too. Love the video and all your stuff. Yezzir

I’ve made 10s of thousands of tortillas and I love the way handled the fat, delicious. I always go full European butter with rub in method. The only thing I’d recommend is when forming your tortillas form them like a Brioches à Tête and for the same reason (clearly you leave the head off). Get the gluten structure forming so when you roll them out they are perfectly round with little difficulty if you any good with a rolling pin.

Just a heads up if you add a small amount of white vinegar say 1/4cup per gallon of boiling water. It will help keep the outsides of the potatoes firm even if you do happen to over cook them. I use to work at a Cafe and this was how we did it everytime.

Breakfast burritos are my all time favorite food that I couldn’t live without. I will definitely try this tortilla recipe too. Back when the world went on lock down 3/20 and most of us downloaded TikTok, Barrio Comida was the first account I followed! I haven’t traveled since 2020 but vow to visit that place when I finally do, especially the tasting room downstairs. Thanks for all the super content you put out. Your kitchen skills, always impressive. But your knife skills, damn! I'm getting better, but I will never get the chance to get any way near your level. You've made cuts ,slices, dices thousands, tens of thousands, probably hundreds of thousands of times? I've probably driven over a hundred thousand railroad spikes in my 15 years on a logging railroad, and people were pretty impressed watching us drive them with our spiking mauls. I have learned so much from your mastery of your craft. Thank you.

Tip for people that don't want cut produce to brown...use a ceramic knife! I never knew that the reason all the fruits and veggies go brown most of the time is because they're being oxidized by the metal knives! You can even cut an avocado in half and leave it in the fridge and that sucker will just get a thin dry skin where you cut it without going brown! (most of the time)
