I like to "look for the best place on the shore"... the harbor I have in Switzerland with my RS700 is so small and narrow... I have only 2.5m entry point and one direction to go :-) For onshore wind condition I always drop the main to safely and slowly run in front of top and rigging. Good videos! I like them.

If you are new to skiff saling when you are going downwind do u have to have the spiniker out

You don't have to, but you perhaps will find thing easier with the kite up. Trapeze boats are like bikes. The faster you go, the more stable they are. Getting the kite up gives you more to balance against and will feel more stable. It will also unload the mainsail in gybes as the boat will be going faster. Running deep with no spinnaker can feel very tippy as the flow over the sails switches back and forth at the top of the tall rig.
