This is almost exactly how I make my rolls. Added tip! You can roll them into balls, then put them on a cookie sheet to freeze! Once frozen, transfer to Ziploc bag. When you want fresh rolls, defrost, rise, bake and butter.

I made these with a cinnamon honey butter recipe I brushed on, and inside when I pulled them apart, and it was wonderful! I tried it as a loaf with half the recipe of 3 cups flour and one packet of yeast, plus an additional 5 minutes of baking time and it also turned out great. 👍 Definitely my new go to for a bread base!

I boil a cup of water in the microwave and leave it in the corner and then stick my dough in the microwave or the oven. Works every time!

The optimal temperature is 105-110 degrees F for active dry yeast. Use a thermometer. Don't guestimate especially at holiday time. Overnight proofing is also done when making an Italian dough sponge for making pizza which ripens the flavor. Potato flakes are often added for sweetness so if you have unsalted mashed potatoes, that was the ideal ingredient. It's the magic secret ingredient in doughnuts.

If you have a drafty cold kitchen in winter, your hot water heater often radiates heat and so somewhere nearby can make a good area to ensure optimal rising.

I'm curious why this method is different from her Dinner Rolls video from seven years ago? Her original method did not require a scale, she just eyeballed each ball, she did not use Parchment paper and she activated the yeast in water this time? Her original just seems easier, I wonder if it's because they can be made over night and she's making many more than before, either way they are both yummy 💝

Update I made these rolls using freshly ground hard white wheat, spelt and einkorn instead of the all purpose flour. They were out of this world delicious. Love this recipe

Hi Laura - quick question - can I do the first proof, roll dough into balls and place them on cookie sheet, cover and refrigerate them overnight - then do the second proof the next day and bake? Just want to be sure I'm understanding. They look delicious. Thanks.

Colleen Ryder I might not be Laura but I definitely have done the second proof in the fridge before when making cinnamon rolls. I think it wouldn’t hurt to try. You probably would just need to take them out and let them come to room temperature for 20 minutes before you bake them.

I’m looking to do the same thing. I feel rolling them and letting them rise on the day of the event defeats the purpose of wanting an overnight dinner roll. I want the prep work done night before and bake the day of.

This is awesome. Question for you? Instead of making them rise a second time, could I form them into balls and freeze them for baking on a later day? I have very little time to cook from scratch, but I do it by cooking ahead and this could save me tons of time. Thanks 😊

I know I’m not the one you asked your question to, but I do that exact thing when making bread! As long as you allow them to come to room temperature and then rise to the appropriate size, the method you speak of should work wonderfully!
