Mole is a sauce where unsweetened chocolate and 23 other spices are slowly cooked together. It is insanely good usually a bit spicy with a depth of flavor.

There's not one "mole". there are multiple different kinds including one that, yes, does include chocolate.

Its like someone threw a whole spice rack in a sauce. Its very deep and complex. Very difficult to describe. Just actually had some the other day for the first time in years so its fresh in my mind.

There used to be a place in El Paso with all these different moles. It had one that looked light yellow, all the way to one that was black. Like a spectrum, probably about 10-12 shades, each getting a little more intense. Then you could order from all kinds of food, like enchiladas, chimichangas, burgers, pizza, all kinds of stuff. Then you could smother any of it with moles. It was incredible. I can't remember what it was called, I hope it was still there.😊

Mole is a sauce that is made of dried ancho chilies, chocolate, dried fruit, and nuts - along with many other ingredients. It was invented by the Spanish when they encountered new-world ingredients. It is an example of medieval Spanish sauce with Mexican ingredients.

I'm Mexican, my mom is the best cook on earth, we owned a couple restaurants growing up and into my 20's. That women taught me everything I know. I make my red sauce for my enchiladas from scratch, obviously, and I do add 1 little triangle of Abuelita's chocolate in it. Abuelita's reminds me of winter as a child. Boil milk and throw in the triangles. yummy!

Lol yes, authentic restaurants almost always make their own tortilla chips. You can't compare them to what you buy in the store.

At HEB you can get "Restaurant Style" chips that are made fresh in store. They're pretty fire

You can buy corn tortillas from the store, and if you don't have a deep fryer, heat up oil in a pot. Cut the tortillas into quarters, fry them in the hot oil for a minute or two, and salt them when you take them out. These are MUCH better corn chips than what you can get at the store.

I’m from San Antonio,TEXAS, the birthplace of Tex-Mex food and I can tell you it’s great! No self respecting TEXAN can live without Mexican food. If it came down to it, we would do A LOT for tacos. No TEXAN can imagine life without tacos. You, like everyone else, needs to come to TEXAS to see if the hype is real. It’s real alright, you just need to find the quality places like anywhere else. It will give you religion.

The only things that make it "Tex-Mex" is the "queso" cheese dip and some of the other American cheeses they put on alot of the food, BUT Real Mexican food uses different cheeses, goat, lamb, beef, pork, sea food and other parts of the animals that the USA don't typically use.

Very true. There is an authentic Mexican restaurant in Atlanta which serves items such as red goat soup, duck tacos and various types of meats in their barbacoa dishes. Different from Tex-Mex but so good. I enjoy both Tex-Mex and Mexican food.

I have to question Josh’s tastebuds because he’s frequently claiming to taste cheese when there is no cheese. They were eating a mole negro which has a lot of ingredients. Some of the ingredients are Mexican chocolate, raisins, plantains, onions, tomatoes, garlic, orange peel, cumin, several types of hot peppers, salt, pepper, cloves Traditional Mexican cooking will use chocolate in savory dishes as well as sweet dishes

Commercial pre-packaged guacamole is terrible here in the US, too. Exactly as you described. It has to be made fresh. You can make it with just avocado chopped up , salt, and maybe a small amount of finely chopped onion, fresh lime juice and some optional hot sauce. Cilantro (Coriander leaves and stems) if you can get it, but don't let it stop you if you can't source it. Pico de Gallo is usually used but you may not get that where you are. It's sold here in grocery stores usually made on site at the store and put in plastic containers. You can make Pico de Gallo yourself easily, but I wouldn't bother to figure that out if you have avocados nearby. Make fresh guacamole immediately! Mole is fantastic but nothing like anything else. I wouldn't say it would be reproducible where you are it has 32 ingredients and is very complicated to make. Also, every family makes it differently so there's a wide variety. Red sauce is easy to make but Green sauce (salsa verde) is very specifically made with tomatillos which are in the night shade and tomato family and have a loose outer skin like onions. They taste nothing like anything else. They're tart and citrusy and get blended in a food processor or crushed in a mortar and pestle. There are lots of videos to make all these things which are interesting even if you never make them.

Tex Mex and Authentic Mexican are similar but are considered different cuisine genres. I’m American and grew up in San Diego but have also lived in Mexico. Also differences depending on the region of Mexico especially when it comes to tamales.

Yes, we are lucky here in the States to have both Mex/Tex-Mex chains and independent restaurants all over the country, really. But you have Turkish food/kebabs, and fish and chips. We do not have either of those routinely available. Chips in the restaurant are made there (at least the small family-owned places where I live). Mole sauce takes forever to make--but when done right, mind-blowing. I have only had that when cooked by older women using family recipes. LOL. You can make your own guac or spicy queso dip at home. I found recipes online. I actually make a queso dip with hot sausage and other fixings in a small slow cooker. Guarantee, if you can read and follow directions, what you make at home will be superior to anything you can get in a restaurant --and without all the weird fillers. Give it a go.

I think the availability of cuisines in the US is very definitely regionally and urban/small town driven. Every city I have visited has Turkish, Arabic, Persian, and Indian restaurants. Most have among many others. I think that Mexican food places definitely outnumber them in many places, but not all.

@@pacmanc8103 I understand that in most urban areas there are a lot of yummy ethnic restaurants and walking foods. It is not surprising there are not a lot of Mexican restaurants in the EU or UK or Ireland. But he has more access in the UK to kebabs and fish and chips similar to what we do Mexican or Tex Mex.

My area in Wisconsin has a large immigrant population from Mexico and other Central American countries. For being a rural area, we have some really nice Mexican restaurants and diners, as well a couple bakeries.

Tex-Mex everywhere in USA. Chips in restaurants made in restaurant. Each table gets a basket with 1 to 2 salsa choices. By the time I finish it, I don’t have room to eat the entree. So basically I had a basket of chips and salsa for lunch or dinner.

Luka, the boilerplate rule is proximity is proportional to authenticity. The closer you are to a culture, the better quality and more options of its food you can find.

Most GOOD Mexican or Tex-Mex places in the US do make their own tortilla chips--I mean they are just deep fried corn tortillas. But the freshly made ones really can be eaten without dip and are good, just as potato chips are.

They tend to still have some flavor left over from the oil that they were fried in. Just needs a little salt to enhance the flavor.

1st any good freshly made tortilla chip can easily be eaten without any salsa or dip. Chocolate in Mexico is not always used as a sweet treat or dessert. In fact it's used quite often like a spice would be such in the case of a savory mole sauce. I believe chocolate actually originated in Mexico. They would use the cocoa beans in beverages. The use of chocolate in Mexico goes back a few thousand years.

When the Spaniards first encountered chocolate, during their exploration of the New World, the natives were using it, unsweetened, in a form of hot chocolate that was closer to (highly) caffeinated coffee than what we'd expect today.

Tex-mex is really common in the general region around Texas, but you could find a Tex mex restaurant or 2 all around the country. In the SW region New Mexican is the most popular, Baja style in Cali, etc. In states with large Mexican populations like Texas, Oklahoma, AZ, Cali, etc you’ll also find a lot of authentic restaurants for the various regions of Mexico.

I've visited a few "Mexican" restaurants in London and they are not at all comparable to Mexican or Tex-Mex restaurants in the US. Tex-Mex and Cajun food are probably the best American cuisines, imho.

the chips are not cheesy but salty and made fried fresh right there in the back with the rest of the cooking they are also crunchy and they taste amazing!!!! and in most Mexican restaurants and even in tex-mex food places they come to you free before you even order

My husband is a chef at a local non-chain Tex mex restaurant. There’s nothing better when he brings me some chips and queso, salsa, pico or guacamole. Sometimes it’s all four. The salsas are made by Mexican ladies and it’s widely known as the best in town. I feel spoiled when he brings home some dips. He also brings Chile rellanos and quesadillas. One of my kids is afraid of black pepper but the other one can’t get enough spice.

I had Mexican eggs for breakfast this morning. The regular kind are called juevos rancheros. Mine was fried eggs, soft corn tortilla, potatoes, chicken meat, green chile, cheese and chili peppers.

Mole is an incredible culinary thing let me tell you. It's normally a sauce with anywhere from 20-30 or so ingredients in it, including chocolate (usually dark or unsweetened, but sometimes milk is used) that's just cooked down until it's a thick, sometimes spicy amazingly flavored sauce. You put it on enchiladas and other dishes as well. It's quite versatile actually. I used to make my own mole and just jar unused mole up and save it for the next time I needed it.

Mexican food isn't necessarily bad for you. There are a lot of carbohydrates in the tortillas, beans, rice. But their sauces are not bad when it comes to eating. I just deconstruct it all and leave out those carbs sometimes, depends on where my blood sugar level is at. We have TexMex in Montana. One place is only open for lunch. No seating, in an old garage. It could be -20 outside and there is a line out the door and around the shop. It's so good.

@@coyotelong4349 Nothing unhealthy about those things, other than the churros. Use the right oil for frying, Avocado oil would work. The American Heart Association dropped their low fat diet recommendations five or six years ago.

Wow man. I think you REALLY should visit Texas, New Mexico, or Arizona for some fresh, homemade, authentic Tex-Mex food. It really is out of this world. You can find Tex-Mex in most states, but the further you venture away from the 3 states named above, the less likely you'll find authentic. And yes, outstanding Tex-Mex restaurants are usually not chains, and do indeed make fresh in the kitchen, most everything they serve. Please know that guacamole should be consumed on the day it is made, which strikes out tub bought guacamole at the store, which some restaurants also buy and serve. Fresh, wonderful guacamole has to be made from scratch, and then served that same day. Sometimes you can get away with refrigerating for one day, but that's it.

I wouldn't consider any local cuisine made in New Mexico as Tex-Mex. What was shown in the video seemed a little "extra" for me from the sauces to dessert. Definitely not the kind of offerings you'd find at Los Pollos Hermanos. 🐔

New Mexico has its own New Mexico-Mex cuisine that is fabulous on its own. Arizona usually does the New Mex-Mex cuisine, not the Tex-Mex. It's also fabulous which is why I was so disappointed when I moved from Phoenix to Los Angeles.

Most Mexican in the states is actually Tex-mex or a fusion of Mexican food and American ingredients. It’s also an adaptation of Mexican food for the American audience. Mole is a classic Mexican sauce that has a little Mexican chocolate in it but the recipe is so different household to household. It’s like a curry being different in every house in Japan or whatever. Each mom has a recipe they use which tastes different in each house.

I haven't personally made mole but helped my kids aunt. Sooo many nuts and seeds and spices roasted and you can't stop moving it ever. Then they use chocolate de abuelita for the chocolate which also has a bjt of a cinnamon flavor

I don’t think Abuelita is anything like Nesquik, is it? Even though both are owned by Nestle. From the obvious difference of a dark, unsweetened chocolate disc, versus a powder of cocoa that needs to be reconstituted. I’m sure you could use Nesquik but it would be very different. The real chocolate used to make authentic mole in Southern Mexico is very unique. The chocolate that’s been used for centuries in mole.

Frying tortilla chips is very satisfying. You start with a basket of soft tortillas, and in less than a minute you've got fresh, hot chips.

Fresh made tortilla chips are like the best nothing like the bagged stuff! We have Mexican restaurants in Ohio, there is a large population of migrant workers from Mexico that come up every year for harvest time to pick vegetables like tomatoes and such.

The Spanish ruled the Philippines and their Pacific colonies from their consolidated position in Mexico. As a result of their ocean dominance, they brought food and cooking techniques from all over the world. Eventually Spain ceded the rule of Mexico to France, who brought their food culture. Today, Mexico has one of the all-time great culinary traditions, mixing their indigenous foods with the best of cultural cuisines from across the World.

Mole is a deep Chipotle sauce with a bit of dark (unsweetened) chocolate that is slow cooked...good mole is fantastic & "bad" mole is still pretty freakin' awesome.

Have you tasted tortilla chips that are so fresh that they are still hot? Homemade tamales? If not, you are missing out. The refried beans should be pinto (red) beans. The sauce actually contains unsweetened chocolate. It is an authentic Mexican sauce.

Many years ago, I stayed with my Godfather's family in the state of Chiapas, Mexico for 3 months. They make the best Mole, I have never found any better Mole that compares to that region. The tamales from Chiapas region are some of the best in the world, especially the Mole con pollo (Chicken Mole tamales), they are wrapped in a banana leaf instead of a corn husk.

Enjoyed your reaction!!! That mole sauce is a chocolate base with lots of spices. If it's made right it takes a long time to make. I live about 5 minutes from this Eldorado Cafe and it is fantastic!!

I wouldn't say it's chocolate based, it's only one of many ingredients but it's not the main one. Moles are primarily chili pepper based.

Tex-mex is a fusion cuisine, sometimes more mex and sometimes more Tex. This was more mex than Tex, and it looked great. I love both the enchiladas con mole rojo and con mole verde, but mole verde is often not available in Tex-mex restaurants. Mole verde is really very mex. I can tell that I would love that restaurant. I've lived in Texas for forty years, so I don't really know what Tex-mex tends to be like outside of a place with strong Mexican-American presence.

Molé is amazing. There are several dozen variations of Molé and they all contain chocolate. They are normally served with chicken. I don’t like chocolate that much but I’ll eat mole 2x per year. The green tomato salsa enchilada is good too (with sour cream), and the cheese enchilada with a sunny side egg on top is yummy too. Learn to make home made guacamole. It’s easy. I’m getting hungry just thinking about this. When are you coming to Texas, Cali, or Mexico to try some of these foods?

Yes, we have tex-mex food around the country. It can vary a fair amount by city and state.

I make homemade tortillas chips and taco shells all the time. There's nothing that compares to homemade.

There are great Mexican restaurants all over the US. There are some differences between Tex-Mex and northern Mexican food, I think, primarily because it has been adapted. There are cities in the valleys all along the West Coast - California and Oregon mainly - that have substantial populations of Mexican-Americans. A town 30 miles south of my city has a large Mexican-American majority. Great restaurants, super food pods, and fascinating grocery stores that cater to people from that culture. So, yes - there are absolutely great Mexican foods across the US. Just look for the old-time food places where Mexican-American families eat.

Tortilla chips are an art. I can't eat store bought tortilla chips. They're usually too brown and taste like cardboard. I have to check out the chips for color, thickness, and salt before I buy them but that's rare. I'd rather go to a Mexican restaurant nearby and buy them there along with the salsa. Store bought salsa is little more than spicy ketchup, horrible. The right tortilla chip is delicious on its own and is a great base for guacamole, beans, meat, and or salsa. Hand made tortilla chips are SO much better than the crap in bags at the store.

In my opinion Mexican foods don't have as much of the zest and spicy flavors. Texas's flavors blended into some simple Mexican dish's created this Tex-Mex symphony of fabulous flavors. The only thing I get upset about is that someone added sour cream. I never had sour cream on my tamales or enchiladas back in the day. Sour cream is a preference.

Peach habanero salsa tastes great, usually has citrus, onions, and cilantro as well, but it has a hell of a kick when it's fresh. And it's definitely not red.

Most Mexican food in the US outside of the regions with large Mexican-American populations are, shall we say Tex-Mex inspired. But real Tex-Mex is a different thing entirely. The thing to remember about Mexican food in the US is that large portions of the southwestern United States used to be part of Mexico and have basically always had Mexican people living there. Texas, New Mexico, and California all have their own authentic regional Mexican cuisine that is both different from each other and from the regional cuisines of Mexico itself. Of course there are also places you can go to get real regional Mexican foods from the various states of Mexico due to immigration. About mole, there are a ton of varieties of mole from throughout Mexico, the most common in the US being mole poblano, which means mole from the city of Puebla in central Mexico. Not all moles have chocolate, but many, including mole poblano does. It's usually unsweetened chocolate and it adds a rich, earthy, slightly bitter flavor. Moles are known for being incredibly complex sauces, incorporating lots of spices, different varieties of chiles, chocolate, sometimes nuts and dried fruits, sometimes toasted or even fully burned bread or tortillas. I've seen mole recipes with over 50 ingredients in them. You can serve it either as just a sauce over meat or, as they had it, as a sauce for enchiladas. Oh, and yeah, most decent Mexican restaurants in the US will make their own tortilla chips. The really good ones might even make their own tortillas, from which they make their own tortilla chips.

I lived in the UK for 10 years ..as American love Mexican food. I went to a brand new Mexican restaurant in Middlewich.. Ordered the chimichanga and enchiladas.. looked back and saw the cook was indian... To be fair, love Indian food as well. But everything tasted like curry .. the only thing authentic Mexican in the whole restaurant.. was.Jose Cuervo tequila... Moved back to the States ..first place I went...was Taco Bell ..even that was better than anything in that restaurant :)

Mole is a very savory, spicy, but nonetheless chocolate flavored sauce. A good one is fantastic. Chile is a meat stew, normally served in a bowl and eaten with a spoon. I was astonished that Josh and Ollie didn't know that. The next time I am in Austin, I will have to try this place out, it looks terrific. I live in the Clear Lake area of Houston and my wife and my favorite local Mexican restaurant is a little family owned place called Los Ramirez. They have a much wider variety of dishes, both Tex-Mex and real Mexican, than most other places. I am wild about their mole enchiladas, although their enchiladas verde are also divine. So is just about everything else they've got. If you ever make it to Houston, we'll be glad to take you to dinner.

Abuelita means little Grandma. My son and his family live in a mountainous region of Mexico, nowhere near the border. I still live in Texas. Authentic Mexican food seems very different than Tex-Mex. For whatever reason the original dishes were modified and eventual experimentation with ingredients created a whole different cuisine. There are regional differences within Mexico as well. But GOOD Tex-Mex is not a given, and fast food chains can't even make a decent taco.

Absolutely! I’ve have had quite a few disappointing Tex-Mex meals even in Texas. Most restaurants are a huge let down in comparison to authentic Mexican food. New Mexico’s version of Mexican food is much better.

You've never had "fresh deep fried tortillas." It's a game changer. Take the same simple ingredients, shove them in a fresh, deep fried tortilla shell, or dip said chips in a dip; game changing. The perfect crunch, the perfect chew. Absolutely, awesome food!!!

Yep mole is chocolate/multiple chili sauce. As a Mexican from texas, I personally hate it. It's an acquired taste.

BUT just because Abuela's is made by Nestle, just know its NOTHING like Nestle. It was bought and the formula hasn't changed. It's WAY different.

There's a lot of fats in TexMex as well as Mexican food. You can make either much healthier than they are by eliminating a lot of the fat.

@@AC-ni4gt I split my time between San Francisco, where fajitas are not such a big thing, and Green Valley, AZ between Tucson and the border where most Mexican restaurants offer them. Actually, one of my favorite places used to be in Nogales, Sonora, Mexico but moved across the border to Tubac, AZ when the border region became less safe and Americans became more reluctant to cross.

No, it's not in Mexico. It's just that the chocolate-containing version has become most popular in America. But there are all sorts of regional moles in Mexico. Google "types of mole" and you will find all the others. What they have in common is not the chocolate but nuts, seeds and chiles.

As a Texican I can safely say that is the whitest "Tex-Mex" restaurant I have ever seen. Having "cafe" in the name was a dead giveaway. Their about page calls their food "Mexican inspired". They need to try authentic food.
