Very helpful. Much appreciated. I meal prep every week (1 year strong!) and often do exactly how you did. Make "basic" style meals and then add other flavors, sauces, etc when I eat them.

Yes, super helpful and relate-able! I eat most meals at home, but I'm cheap and need quick, easy, healthy meals! I love watching your videos for inspiration, especially since you're conscious about adding protein as well. I need to try that salsa bean mixture!

Idea for the broccoli stems: I slice them really fine lengthwise (e.g. with a peeler) and eat them with some salt, olive oil and black pepper, kind of like salad. It looks fancy and tastes delicious :)

also for the mushrooms- i recommend putting them on a pan WITHOUT any oil etc, just add a good amount of pepper and salt, and most importantly let it 'evaporate' without any cover on, since they will let out their water. that way they taste waaay better.

Thank you for using store-bought salsa. I've been searching for vegan/vegetarian meal videos and everyone makes EVERYTHING from scratch and it looks exhausting. Scares me away from meal prepping/healthy cooking. I appreciate this so much!

For the overnight oatmeal just mix all the dry stuff and to keep it from being super mushy u don't need to add the liquid into all the oat containers. U can do it for each day a night before so they won't oversoak

I always just use steel cut oats instead of traditional/rolled oats. They're a bit tougher so they easily withstand a week long soak but get soft enough to eat after a one night soak.

thank you so much rose, because of a lifetime illness i'm stuck to bed a LOT being too ill and i can meal prep once in a while and this helps so much so that at least i can have a decent meal during the days i'm extremely ill

To your grammar question...it is "the next protein we're going to use IS beans," because "is" defines "protein," which is singular.

We can talk about if something is misleading or inaccurate, but that doesn't mean the sentence containing the info is grammatically incorrect. Identifying what the main source of protein in a meal is, I think using "the protein is..." makes sense. The most important thing about language/grammar is that the intended idea is conveyed effectively.

Thank you Rose! These videos may seem over simple to you, but I am just moving family over to whole foods plant based dinners and have NO clue. I am so happy to follow quick nutritious meal ideas - no recipes. The way you put lentils in the rice, mixed beans already on hand, flavored tofu and seasoned steamed veggies is all I need. You motivate me to make some staples for the week and get dinner whipped together speedy quick! Love it :) :) :)

Nice to see you using the broccoli stem! Stems and leaves of broccoli, cauliflower, kale etc is perfectly edible. It’s rediculous that people only use such a small amount of all those veg, while almost the whole plant is perfectly edible. Fun fact: cabbage and brassicas plants are about 1m2, the broccoli/cauliflower florets are only about 15% of the plant and are actually the flowers! By the way, no need to peel the carrot at all. The most nutrition and flavour are in the skin!

I just discovered this. And I kid you not - this is exactly my style of cooking! Not only, this has exactly my inner narrative while I am doing it. LOL! Sistas of wok overflow! Why wash dishes! Fry frozen stuff you dont quite remember what is! Add random sauce! Pick some food from the floor! Love it love it love it! Pour some spices you have no clue what they are (I do sniff them to guess if they fit) on top.

I've never had luck with lentils. I've always boiled them and then drained them rather than treating them like rice and waiting for them to absorb liquid. I like them mixed into pasta sauce with whole wheat pasta - great post workout high protein meal

outside of the Broccoli stems can be hard ; it could be helpful to remove the outside part, the inside is so soft and moist !!!

I always squeeze fresh lemon and/or lime on my veggies for a nice pop of extra flavor without needing oil, salt or butter.

There are two different kinds of fiber in broccoli. The stems and crowns have different kinds. I take my broccoli stems and cut them into small pieces and toss them with rice.

one tip though is to put the stem in first into the water for like 10m. It will be as soft as the florettes later on

Omg thanks for telling us about the broccoli stems.... 😶 I’ve always thrown them out because they are too hard and that’s just what my mom has always done. Will no longer be wasting any stems! haha kind of sucks how I just ate a lot of broccoli and wasted the stems though :(

Just a fyi I was curious about how much protein in the chickpeas and how much protein in the black eyed peas you cooked. The Chickpeas have 39g of protein for 1 cup and Black eyed peas have 16g for 1 cup. =D

I used to cook brown rice and lentils together and it worked perfectly! What you should do is use a long grain rice and not the short grain (Basmati is the best) and after soaking it together with the lentils - just put the same amount of water- 1 cup : 2 cups of water. If you add some stir fry/ caramelized onion it’s called Mujadra - one of the best middle eastern dishes :)

Brokkoli stems are super delicious! But you need to cut of the dark green part on the outside so it’s not as hard anymore.

I can’t find smoked tofu anywhere and having to order is kind of an inconvenience. Is there a substitute for that? I’m still not sure how to work with tofu yet

My favorite hack to have cleaner and better looking mushrooms. Remove the stem, in the inner part of the mushroom ,grab a corner and peel back all the way to the top of the mushroom and repeat until you have peeled the whole mushroom!

Pro tip....u can soak your produce in your sink. Fill er up put your fruits and veggies in and drop some white vinegar in there. The vinegar is a natural way to clean thoroughly. I personally can't just run water over my stuff.

I hate wasting food too. When ever I have veggie scraps or even some that start to get wilted and know I wont be able to use it in time I love to put them in a containeer and throw it in the freezer. Once I have a full container I make a veggie broth out of it.

Hey can you warm up the overnight oats to eat warm instead of eating them cold? Just a thought. I love hot coffee in the morning but can’t imagine having it with cold oats. Thank and I really like this video I’m willing to try it thus coming week. I appreciate your feedback 😁

How long do the veggies last sealed in the fridge? I always get super cautious once they've been cut and have to eat them the same day 🙈 I'm honestly so bad at meal prepping I'm paranoid it will do hard and dry and yucky 😂 like if you cut a carrot and leave it out on the side and it goes weird

The husk of the broccoli stem is super fibrous so i cut/peel that off -but def eat the inside of the broc stem! :)

I can’t find that smoked tofu! Is there a specific store you buy it from? I checked ingles, Walmart, and target no luck

Thanks for the video. lentils cook really quickly so soaking is not necessary, maybe this is why it was a bit mushy. great ideas for meal prep.
