Any advice for a 20 year old cook. Currently a sous at a bistro my chef has advised me to try and work in the best restaurants in my city and learn as much as possible.

Gday legend... when i was growing up I worked in 4 different restaurants a week... this allowed me to learn from a variety of chefs, cuisines and styles of service. I had a day job so night time was all about free labor and being a sponge. To this day it is still the best moment of learning i have done in the culinary space. I highly recommend putting the time in now to just keep learning. Which it sounds like you are on the right track. Let me know if there is anything else i can help with
