My homemade potato & peas samosas, wrapped in delicate phyllo pastry sheets, are simply irresistible. Although not the traditional triangular shape, they are crispy on the outside, yet bursting with tender potatoes, peas, and aromatic spices inside, each bite is a delightful journey of flavor. Despite their delicate appearance, these samosas pack a punch of homemade goodness that keeps me and my family and friends coming back for more, bite after delicious bite.

Recipe:
SAMOSAS WITH POTATO & PEAS
Ingredients:
2 large & 2 medium potatoes (peeled/cut/boiled) add sea salt last 5 minutes of boil
1 cup frozen peas (thawed)
1 cooking onion finely diced
1 purple onion finely diced
1/2 teaspoon turmeric
6 cloves garlic finely minced
15 - 20 strands fresh chives (cut small pieces)
1 teaspoon chilli powder
1 tablespoon garam masala
2 teaspoons curry powder
2 teaspoons sea salt
1 teaspoon garlic powder
2 tablespoons oil
1-1/2 tablespoons butter
phyllo pastry sheet (cut into quarters) as seen on video
1 egg (for samosa sealant)
2 teaspoons caraway seed (I did not have any) optional
