Thank you so much for sharing this method for cooking roasted vegetables. I got a bottle of Kraft Balsamic Vinaigrette and made roasted veggies for dinner tonight. I couldn't wait to try it. They were so delicious, I used veggies that I had on hand: mushrooms, red onion, red bell peppers, zucchini, cauliflower and garlic. I cooked them in an 8qt. 1200w air fryer at 380 for 12 minutes, stirring them around half way through the cooking cycle. They came out great, so tasty. Thank you again.,

@@rachelcookswithlove I am definitely going to do this recipe, except I have a question. Wouldn’t it be better to toss with the balsamic vinegar first rather than the oil? It would seem to me that oil would be a barrier to the vinegar. I plan to use butternut squash and carrots instead of the sweet potato. OK I’ve been reading through the other comments and they say you’re using a balsamic dressing rather than balsamic vinegar- that would make a difference.

I just recently started to roast up a lot of veggies and I keep them in the fridge and add to whatever meal I make. I’ll eat them at least 2x a day until they are gone. Great tutorial! I usually do Brussels sprouts, cauliflower, carrots and onions. The funny thing is that I’m picking up groceries in the morning and everything you used is in my order! Delicious!

I never realized to cook the sweet potato first!! And have never tried balsamic vinaigrette!! Will definitely be doing this! I tend to roast sweet potatoes, carrots, Brussels, broccoli and red onions, yes, a boring color combo!! I use Weber garlic hen blend as well.

Hey, Rachel! Looking good there, sister! You look like you've reduced your weight by A LOT! Good for you! The veggies look so delicious and I"m going to be making them this week for dinner. Putting in the balsamic vinaigrette is such a good idea for flavor. I've also used Italian dressing and I like it, too.These veggies are so good with chicken breasts marinated the same way as the veggies. It's a good meal for when I don't feel much like cooking.

Thanks a mil for this recipe. I saw it for the first time today and went to the grocery store bought the ingredients and tried it. I added oregano instead of pepper and carrots. The next time I try this recipe, I'll try some teriyaki sauce along with the vinaigrette to taste if it's good.

Great! I will try that cheaper store bought balsamic vinegarette because I currently use a really expensive barrel aged version that I buy at a farmers market. Going to try your selection of veggies also, I currently copy my favorite Lebanese restaurant in Houston and roast green/red/orange/yellow bell peppers, yellow squash, sweet yellow onion and small white mushrooms which is also a great combination for anyone that would like to try it.... Roasted veggies are extremely good!

Thanks. It's so simple, but I think you're the first one to "nail it down" correctly. You covered all the details sometimes skipped by others. You emphasized just the right things. Size, order, how to spread in the cookie-sheet, You even (without explicitly saying that) optimized the number of dishes used, and minimized dish-washing. Yes, this is something we (in my home) do regularly without even thinking about it as a "recipe", but STILL I learned something new today. Whereas I usually compromise on a almost-perfect roasting because I put it all together - I now see that it's not even a real hassle to put the potatoes/sweet-potatoes first, then use the time they "pre-roast" to prepare the rest of the vegetables. and ADD them for just the perfect level of roasting -- For that I thank you very much. Great video. Will certainly look for more.
