Yes, it's fine, dry yeast. Just follow the instructions on the packet of yeast 🙂

No lard, use margarine or butter, out of interest shortening is based on vegetable, not pigs 😜

White shorting is called Trex or stork White shorting from supermarket, or hi street, same as bread improver hi street specialist shops or Amazon shop, and of course eBay 😀

21 grams fresh yeast, if you find it moving to slow up it, or cut down the salt, depending if you are using salted butter or white shortening 👌

I discovered something called a Chelsea Bun being sold at a Canadian grocery store but their buns are coated with cinnamon so they are kind of halfway between a cinnamon roll and your style of Chelsea. Are authentic Chelsea Buns never made with cinnamon?

The Chelsea buns are only butter, sugar, and currents, but I like sultanas, so I mix them 😋 cinnamon is for cinnamon buns, or apple buns 😋

Yes it's a bun dough, this recipe is very old school, it's been used in the bakery industry for years, so I decide to share this with everyone, as most Bigger bakery and supermarkets buy in premixed bun or concentrate 😀 laters Steve
